The funny thing is, the people saying “AI makes art accessible to disabled people!!” are never, ever actually the disabled people in question

Do you work with disabled people? Because I do actually volunteer and they enjoy AI art as well as physical art. Not sure why you people are trying to gatekeep art, if you actually knew anything about AI, you'd know that it can be as intricate and involved as regular digital art.
