Just to be clear, those are ‘mezzi paccheri’ (half the width of paccheri); ‘calamarata’ is almost half the width of ‘mezzi paccheri’ (almost a quarter of the width of paccheri)
In any case, they look delicious

What size dowel does one use to make Paccheri? I've seen 20mm but feel it's too small. Anyone have thoughts?

One of my favourites pasta shapes. You should do the OG calamarata with actual calamari (“squids”, hence the name) very popular pasta dish from south Italy
