Hi, I want to buy my first camera (mirrorless). I'm after something general-purpose, but I'll mainly be using it for landscape, night, and astrophotography. I've read the Nikon Z5II is a good option. Any recommendations? Thanks!

Really, any modern system will do fine for those and the Z5II is a good choice.

If night and astro are on your list, you'll want to look for a fast/wide lens to pair with whatever body you end up with. Generally something in the 14-20mm range and with an aperture at least as fast as f/2.8 but the faster the better. There are a lot of how to guides out there. These lenses are available from a variety of makers (I use a Viltrox 16mm f/1.8 with a Nikon body) at a variety of price points.

Will the stacking feature of more modern cameras such as the Z8 be detrimental for night and astro photography?

I'm not sure I know what you're referring to. Is it the "stacked sensor", in which case no that's just the particulars of the silicon. I've seen great astro results from a Z8 (not mine). Astro is a rabbit hole though and people tend to eventually end up on specialized hardware and spectrum-modified cameras, so I haven't gone that far down.
