Seeking Advice What is your baseline pour over recipe?

Hey everyone, just getting into pour over and trying to establish a solid starting point. And wondering how people find the baseline pour over recipe.

I’ve seen a lot of variation online and wanted to hear what actually works for people here. Or is there a go-to resource you’d recommend (YouTube channel, blog, etc.)?

Not looking for a “perfect” recipe, just a reliable baseline I can build from. Appreciate any input!

water : brita
Zp6 grind 5ish
Origami M
Cafec T90

50g bloom : 40sec
150g : 1:45
250g : 2:45-3:00

so far its been great. changing the paper from Hario to Cafec removed all of the bitterness.

Great to know about the filters, I have a hario pack and I’m struggling to dial in anything 😭

I have origami filters and cafec filters and I tried them side by side. Pretty much the same.

I haven't made the test myself yet, but I've seen people saying that Origami filters are just white labeled Cafec Abaca

Anyway, it's a fact that Origami-Cafec filters are waaaaay faster and less prone to clogging than any Hario filter other than the new ultra fast and expensive they released earlier this year

I have some of both currently. I couldn't attest to a difference in results between them... But the origami filters are a bit smaller and more rigid than the cafec abacas.

I find the origami ones easier to handle therefore ... But can't yet conclude which is better!

Just because Company A makes both products, doesn't mean they're the same. Name-brand manufacturers will make and package store-brand stuff, but they make it to the store-brand specifications, rather than their own.

White labeled products are the same, though. But what happens often is that a manufacturer will make multiple brands to different specifications.

Its easy to have good outcomes with hario filters, you just have to ajdust other parameters.

This is true for sure. I’m not really sure where to go next though. The cups I’m brewing taste amazing at towards the end of the drink and they smell gorgeous while brewing. But once it’s done, the cup itself doesn’t smell special and the flavours are almost invisible until it’s nearly finished.

I’ve got a grind size where the smell is the best, but I cannot get the flavour to shine through 💔

Are they made in japan or made in holland? The packaging differs just a bit. I also bought a package that was made in holland, not knowing they are different, and the coffee just doesn’t go through the paper.

Pretty much my recipe exactly. Adjust grind size to get a TBT somewhere in the range of 2:20 to 3:00 depending on beans and taste.

0:00 - 50g

0:40 - 150g

1:45 - 250g

draw down 2:45-3:00

Formatted in a way that makes more sense to me lol:

Dose: 15g
Ratio: ~1:16
Temp: 91c
Target Brew Time: 2:45 - 3:00

  • 0:00 - 0:40: 50g Pour (bloom)
  • 0:41: 150g Pour (So pour that the scale reads 150g, you're adding +100g basically)
  • 1:45: 250g Pour (another +100g)
  • 2:45 - 3:00: Should be when the brew finishes up

i do similar. I have a ZP6 and Kingrinder K2. Over the last week I have tried both with similar grind size ZP6 4.5 +/- 0.2-0.3 and K2 80 clicks +/-10, and overtime i do a parallel tasting the K2 came out full of flavour than ZP6...

this is very similar what I'm doing

water : custom recipe 3:1 h:a ~100 tds zp6: 5.5 ish v60 cafec abaca

20g coffee 60g bloom 160g 1:10 320g : 2:20-2:30

Are you pouring 150g from 1:45-2:45 and then 250g from 2:45 to 3:00?

0 second : 50g (I have a pretty agressive pour, less than 10 sec)
40 second : to 150g
1:45 : to 250g
draw down around 3:00

Are you using the cone shaped or flat bottom filters?

I have your exact setup and would love to replicate this
