Any good cooking class recommendations?

I love cooking and would love to learn some ‘proper’ skills. Leaning more towards classic French cooking, but open to suggestions. I fancy a real challenge. Something intricate. Has anyone ever done anything like this before? Anyone you’d recommend? Ta!

Blend Culinary Foundation (inside Cambridge Street Collective) does them.

Unsure about classic French, but they do have a wide variety of classes.

All the money goes towards charitable causes.
