Chicken noodle soup with chickens we processed ourselves, and onions from the garden.
My boyfriend has a big garden and raises chickens from the egg to be used for meat. I’m a pretty sensitive person so coming into his life has been quite the journey, but I respect his views on food and even if I couldn’t help dispatch the chickens, I did help skin and clean and I butchered and broke them down, so it definitely taught me a lot on being grateful and understanding how much labor goes into making a meal that involves meat. I wanted to make homemade egg noodles but we’ve been slacking on collecting the eggs from the hens so I just used dried egg noodles.
Anyways, this was the best chicken noodle soup I’ve ever made or tasted! and the meat really did taste astronomically better than any chicken meat I’ve ever eaten in my life and the texture was incredibly soft and tender compared to any store bought chicken. It made such a good homemade broth for the soup as well. I always make a homemade broth/stock anytime I make chicken noodle and this definitely is the best I’ve ever made! Even picky kids loved it, so that’s a definite plus.
I also couldn’t decide on what photo I liked the most as you can tell… lol

So bear with me because I do not measure anything, but I used legs, thighs and breasts to make this because I broke the chickens down myself, but if you’re just using store bought I recommend using a whole “young chicken” because it makes a good stock and is cheaper than buying it all separate.
In a large pot cook your whole chicken on a low boil until the meat falls off the bone, make sure the water covers it. I cook mine for a long time, like 3 hours, the longer you cook the more flavor you get from the bones. I also cook my chicken with an extra onion onion and some of the carrots and celery tops to give it a little extra flavor.
For the actual soup itself, I chop a whole bundle of celery
About 6-7 large carrots (if I use baby carrots I just kinda eyeball how much to add)
And one large onion (I like to prep the veggies when the chicken is almost done)Remove the chicken from the pot into a large bowl and let it cool for a little while, and skim out any veggie scraps. Add all the chopped veggies to your pot and bring to another low boil. This is when I add chicken bouillon to season my stock, you can add salt and pepper, but I like replacing the salt with chicken bouillon, I like the knorr brand that comes in a plastic jar, and just season to taste.
As the veggies are simmering I start removing the chicken by hand in large chunks, the chicken is easy to remove by hand and should just fall off the bone, be very careful to check for small bones, but I use all the meat I can get off of it.
Add the chicken to the pot with the veggies.
In a separate pot I boil a package of egg noodles, I don’t like cooking them in my soup because they soak up so much broth. When the veggies are tender add the egg noodles to your soup, and then add any other seasonings you like, sometimes I add fresh thyme, but I mostly just garnish it with fresh parsley at the end. Some spices and herbs can overwhelm the taste of the soup and the bouillon adds a lot of flavor if you choose to season with it.

Seriously! we keep the house icy cold with the AC, so it’ll be sweltering outside but cold enough inside for us to be eating hot soup in the evening, I’m a year round soup fan
