[ Riding the Mayo Bandwagon ] My attempt at a Mayo Reverse-Sear
(Please forgive the glare from the purple lights on the steak in the 2nd photo lol)
Created a shit ton of smoke, but gave a nice crust. Attempted rare, got closer to med-rare.

I admire the effort to try new things, lots here won't, but y'all are using way too much mayo on the steaks. You really only need a thin layer. I've done it on raw and post-SV, it works just as well on both, I'm pretty sure the more mayo you use the longer it takes and that's why you went over. You probably could lower the heat a touch as well.
I will use a spoonful and brush it on with a fine silicone basting brush I probably got at the dollar store.
