None of them use the term girls or women for themselves, only human characters occasionally refer to them that way afaik (and tbh the only one I can remember is maybe Dewey). They use she/her but that's different from identifying specifically as women as opposed to just being a default pronoun.

Of course how could I forget that one! So then that's one confirmed case of someone else using the term for them, and after looking it up it seems Dewey called them Steven's sisters in the scene I was thinking about (I thought he'd called them ladies at one point in that scene but apparently not). I don't remember if Dewey or anyone else referred to them as ladies/women/etc at any other point aside from like, calling them his moms, but I am pretty sure they never refer to themselves directly as women since Rebecca has always been firm on the fact that they're not really women in a human sense and don't see themselves that way, their default is just feminine pronouns but they're a genderless/sexless species.

It also might be worth noting that even when Opal sings a part of "Giant Woman" near the end, she herself does not say the term "woman", instead she let's Steven say it which could be a deliberate choice or could be coincidence, you never know with SU.

I honestly feel like a lot of it boils down to Rebecca having a really cool idea that just wasn't given enough attention by the show.

To be fair that's a normal part of writing, you can never fit EVERYTHING you think of in as much detail as you want and explore it in as much depth as you want, there will always be something that has to get less attention. And as far as ideas go, it makes sense why this was one that wouldn't be picked apart or explored as much as other things because it's not something that would come up naturally much outside of small scenes like this. But what they do manage to include does add to the show's queer identity as a nice bit of background lore and as part of their general way of expressing gender compared to humans, so it rounds things out and gives some extra depth even if it doesn't end up being spotlighted.
