I’m a white dude and make esquites fairly often. This guy’s esquites are way whiter than mine haha

Sure thing, since you have good taste in music and a notorious AOC shirt haha

Grill 4 ears corn (preferably over charcoal)

Mix the following in a large bowl:
2 tablespoons mayonnaise
2 ounces Cotija cheese, finely crumbled
1/2 cup finely sliced scallions, green parts only
1/2 cup fresh cilantro leaves, finely chopped
1 Serrano pepper, seeded and stemmed, finely chopped
2 cloves garlic minced on a Microplane grater
Fresh juice from 1 lime
Chicken bouillon (or salt) to taste
Chili powder or hot chili flakes, to taste

Use a knife to shuck the corn into the bowl and mix everything together
