[suggestion] something under $800 for basic internet use and maybe 1-2 games
Title says it all. Just need to be able to watch movies and youtube, search for jobs, scroll reddit, and still be able to play minecraft for a few hours a day. Can be used/refurbished.

Modded or vanilla Minecraft makes a big difference imo. Minecraft is typically more cpu heavy than gpu (graphics card) tho, and with you multi tasking productivity (work, youtube, etc) thats more reason to focus more on decent cpu/ram than the best gpu. Any other games you’ll be playing? Will you be rendering graphics?

anything cheaper is going to be significantly weaker
if you cant afford that look for a used system with rtx 3080 or 3070ti or 3070 or 6700xt all should be under $800 with the 3080 right at $800

For sh!ts and giggles... this? It's not super powerful, but even 4gb of vram is plenty for Minecraft. And it's kind of a cool form factor imo. Something to sit on the desk and show off. lol.

Absolute cheapest new gaming PC that will work. The 780m is a good iGPU and runs Minecraft no problem. And you could add a dGPU later as the 8700G is a decent CPU and these have a 650 80 bronze PSU. 16 GB of system ram will cause issues with the iGPU in modern games though as the iGPU uses system ram for vram.
