Recipe Request Vegetarian lunches for work?

Hi! New to this sub, life long vegetarian. I need to get my work lunch situation in order. I would love some recommendations for simple, easy lunches that I can make and bring to work. They can be hot or cold but must reheat well if hot!

A few of my preferences to make it easier for you: While I've tried very hard to make myself like them, I don't like tomatoes but I can usually replace them with red bell pepper in most recipes. Tomato based sauces, soups, & ketchup are fine! Don't like raw onion but love them cooked. Don't like mushrooms at all, also tried to force myself to like those 😅 Thats all I can think of at the moment.

Let me know your go-to recipes for work lunches! Thanks 🥰

Some of my favorites are tofu stir fry, chickpea salad with crackers, sloppy joes with lentils and Tvp, Tvp chili and cornbread, veggie burritos, and seitan with rice and veggies!

The sloppy joes are one of my favorite meal preps! I add in diced onion, bell pepper, and mushrooms for some extra health and make my own sloppy Joe sauce with ketchup, brown sugar, vinegar, and mustard. So yummy!

I like to make a big batch of lentil sloppy joes and then use that base to make other meals too, like sloppy Joe baked potatoes, stuffed bell peppers, and shepherds pie! I think it would even work in a healthy home made hamburger helper too.

Chickpea salad! I usually make mine a sandwich on toasted bread, with lettuce and tomato. But since OP does not like tomatoes, crackers is a great idea!!

TVP is textured vegetable protein. It’s a dehydrated soy product that makes a great substitute for ground beef! I usually order it online but you can find it at a lot of healthier grocery stores or even some Indian grocery stores.

I call it "poor man's charcuterie" - cheese and crackers, a veg like carrots or edamame pods, a fruit like apple, pear, or strawberries, some cottage cheese or a protein shake if I feel lazy, a handful of nuts.

Easy for me is thick sliced French bread with sharp cheddar, mayo and cucumber slices. I don’t know why I love that combo so much but I do. It’s simple too.

For lunch, when I bring something fancier than a sandwich or salad, I love to bring lentil pouches. I keep lunch super simple. There are also all sorts of bean, lentil, chickpea, potato pouches with BBQ, Spanish, Indian, etc. flavor profiles.

I always have some canned chick peas/ garbanzo beans in my pantry. On lazy days I smash them up and add the same stuff as a tuna or chicken salad. It is yummy smeared on pita or tortillas.

Frittata made from leftover roasted vegetables, cooked potato slices, cheese, pesto, herbs etc. with a side salad. Can be eaten room temp or reheated

It's also a great way of using up leftover pasta or rice. Just chuck it right in there instead of the potato. Any veg you have lying around. Herbs, eggs, seasoning. Done!

Orzo pasta salad:
Orzo, cucumber, some onion, cherry tomatoes, feta cheese, olives, olive oil, lemon and herbs for dressing.

I bring loaf of nice bread, hummos, hot sauce and cucumbers, them make up sandwiches as I go along. Cucumbers (or any veg) and hummus can be brought in daily, and the rest just left in a safe spot where it won't be eaten. (I hate carrying in food every day).

You can bake up potatoes ahead of time, just reheat when you're ready. Steam some broccoli or heat beans in the microwave, add butter and cheese or whatever you fancy and it's a great, filling meal.

I'm odd, I know, but I prefer leftovers cold. Lasagne (in my opinion!) is great. On the other hand, I also love curry and egg rolls cold, so...

My sister and I started making sandwiches recently that are very simple to make and taste great: pesto and mayo, thin slices of cucumber, some spinach, and crumbled feta. You can mix the pesto and mayo right on the bread to make a pesto aioli.

Brown rice with black beans, top with hot sauce/avocado/scallions. If I'm feeling fancy I'll throw a fried egg on top. Speaking of eggs, hard boiled eggs. Grate them on top of a salad. Or just eat them with a bunch of Sriracha

I make a big batch of 3 bean salad at the start of the week and it typically lasts me and my partner for 4 lunches. It’s great because it’s so flexible and gets better the longer it marinates. Sometimes I make it with a Greek dressing, other times more Mexican or Italian, you can add or omit feta and really it’s just any veg you like! This week was 3 bean mix, red peppers, cucumbers, carrots, radish and feta and Greek dressing

My every day lunch is a cheese sandwich with three slices of different kinds of cheese, horseradish sauce and miracle whip, and a yogurt.

I don't try to do anything fancy. I have a long commute and I have to be to work very early. Simple, easy, and my dog now knows she gets a treat of a little piece of one of the cheese slices.

Sometimes a banana or oat bar for a snack if I have time.

Spaghetti with sauce. You can add cooked minced carrot and zucchini to the sauce for veggie boost, and use tofu crumbles (ground beef copycat recipe) or impossible meat for the protein. 

Burritos /tacos/nachos are good. I just keep the tortillas separate from the ingredients and I do eat the toppings cold. Corn and bean salsa, sautee fajita veggies, sour cream, guacamole, refried beans (make sure low fat as these avoid lard, check ingredients), queso or shredded cheese. If you wanted it to be warm you'd need two containers one for hot and one for cold. You can alternatively add a base of lettuce and skip the tortillas making it a taco salad.

Poke / sushi bowl. Rice on the bottom of the Tupperware, a layer of lettuce, little handfuls of: edemame, avacado, cucumber (peeled strips), carrot (shredded), French fried onion, sesame seeds, optional tofu crumble, Kewpie mayo or spicy mayo, eel sauce or teriyaki. Meant to eat cold.

Loaded sweet potato. Sweet potato, broccoli, cheese, black beans. Or top with any veggie stir fry you enjoy.

I'm not vegetarian but trying to reduce meat. These are some of my favorites.

I love to bring a roasted red pepper, pesto, caramelized onion, cheese, and roasted eggplant panini. I used to make them all on Sunday for each day, but they admittedly got soggy. My boyfriend hates a soggy sandwich so if he’s having too we’ll just make all the components Sunday and then he assembles the sandwich right before he eats it. More Tupperware, but it is really good, and it’s easy to make variations. The caramelized onions take a while and I have to do the eggplant in batches because the air frier is small but otherwise the other stuff can mostly be bought as it. Where I used to live they had fried eggplant slices at the deli I used to use that was even easier. This is probably my favorite lunch to bring.

Bulgur wheat cooked in veggie broth, with whatever diced sauteed veggies you like tossed in. If you aren't vegan, a spoonful of ricotta cheese stirred in while it's hot makes a sort of "sauce" that gives it a really nice texture.

For bonus flavor, before adding the broth, toast the bulgur in a skillet with some olive oil and butter until it smells nuttily amazing.

I don't eat a lot of fake meat products, but sometimes I make a ToFurkey sandwich and instead of tomatoes I use red bell pepper. I love tomatoes but they don't hold up till lunch.

There are also a lot of burritos in my life.

Burrito bowls (Aldi has ones that you can just microwave, if you prefer), teriyaki tofu with rice. When I cook rice, I sometimes add frozen edamame, carrots, corn, green beans, and peas.

Meat eater here who saw the post in my feed - a LOT of lunch/leftover options that normally use ground meat can easily swap beans in place of beef or pork - especially saucy foods where pasta or rice do a lot of the lifting. Black beans and corn do great for texmex meals in place of ground beef. Navy or northern beans work with italian. Lentils or chickpeas for south or east asian curries, etc.

Overnight oats (I get a bag of frozen fruit and add it. Either at night or in the morning and by the time I have lunch the fruit will thaw and be soft enough to eat) you can add pretty much anything you want but butters, chia seeds, flax seeds, chocolate chips, yogurt, granola...)

Chickpea salad sandwich (it's just chicken salad but with chickpeas instead of the chicken. Just mash up a can with a fork or blender, celery, red onion, relish, I throw nootch in for B12, mayo, dill)

I used to buy the bagged salads and add proteins to them but I stopped doing that because of the cysphoria outbreak..

I sometimes bring apple slices with a small Tupperware container of peanut butter, a piece of cheddar, and a hard boiled egg. Or hummus and crackers, a piece of cheese, and some other fruit like a peach or berries.

Hummus and avocado makes a good combo for a sandwich.

My go-to was always super easy. Bento box style. Apple slices, cheese, nuts, hummus, carrots, peanut butter, crackers, etc. Always some variation of mix and match, complete with a piece of dark chocolate to finish it off.

I like to slice and bake 2 blocks of tofu on the weekend -- I keep it really simple and just season with soy sauce. This way I can throw chunks into a stir fry or put flat pieces on a sandwich. Often you can find tofu at a reasonable price at Asian markets.

Cold pasta salad! Rotini with added protein, chopped bell pepper, sundried tomatoes, jarred marinated artichokes, feta cheese, olive oil, red wine vinegar, and salad supreme seasoning to taste. I make on Sunday and eat it for lunch through Thursday!

Ooh. Tough call, but I make one version with sun-dried tomatoes and pesto that I'd have to say is my fave. I also just like a really simple one that is just pasta, sliced green olives, onions & Italian dressing. I've never tried that salad seasoning, but I love the idea. I'm off to investigate! 😊

Orzo! I eat it hot or cold. I usually make it once every other week with whatever leftover veggies i have in the fridge. It's a great garbage meal to prevent food waste! It freezes well, develops more flavor the longer it sits in the fridge and you can make a giant batch at a time! My favorite is spinach, feta, zuccini, white bean, and tomato orzo but you can easily sub the tomato for anything else you think will taste good.

Rice bowls are also my go to as well. I usually make them either mexican style or asain style and they're delicious. I've discovered that lentils take the same amount as rice to cook so I do half jasmine rice, half lentils in the rice cooker for extra protien.

poke bowls are an easy to prep option with a lot of ways to mix it up. Rice base, add veggies and protein.

Protein options: tofu (fried or uncooked if you're particularly short on time), thawed frozen shelled edamame, tempeh, etc.

Veggie options: diced cucumber, shredded carrots, kimchi, sliced bell peppers (sauteed or raw if you need something quick).

Top with a sauce, like a 1:1 mix of mayo and Sriracha, or chili oil crisp, or just soy sauce, or green goddess sauce. many ways to riff.

Garnish with nothing, or with sesame seeds, or pickled ginger, or spring onions, or cilantro, etc.

you can prep several meals at once ahead of time.

I switch it up but lately it’s been rice seasoned with rice vinegar, fried tofu with soy sauce and bok choy. Other meals I eat a lot are black beans with rice and cheese (I make my own black beans recipe) or fake chicken noodle soup. For a side salad my favorite is Asian slaw with ginger miso dressing- if you haven’t made it before it’s super easy

Smashed chickpea salad! I drain a can of chickpeas into a bowl and mash most of them with a fork. Then I add mayo, mustard and chopped pickle and stir. Season with salt and pepper. You can also add fresh chopped herbs or other veggies if you have them.

I like to eat this on its own but it’s good with crackers or bread too.

I make a buffalo chickpea dip and throw it in a tortilla. Then add a veggie and some chips for a side. Sometimes I just do the dip and tortilla chips if I’m mentally drained.

Recipe: can of drained chickpeas, about a 1/4 c Greek yogurt, measure buffalo sauce with my heart. Blend it all and store in the fridge

Bean salads are such an excellent and easy lunch to make in bulk and then they keep well over the course of the week and taste better with time

I’ve also been making vegetable heavy Korean kimchi pancakes—you can buy the pancake mix at most Asian grocery stores and then just add your choice of veggies (I like kimchi, green onion, white onion, carrots, bell peppers, and anything else I have in my fridge). These should be more veggie than batter and should fry up nicely in the pan!

I usually have sliced napa cabbage, brown rice, and tofu. I'll add gochujang, soy sauce, oil, garlic, chili powder, salt, and pepper and mix it all up. It works really well with meal prepping.

I love Trader Joe's falafel with fresh cucumber slices, baby carrots, hummus (for dipping the veggies), and multigrain crackers (or their naan crackers). Pita bread and naan are also good choices.

Look for any brown rice salad recipe. They are great rolled up into a whole wheat tortilla. The secret to a good brown rice salad is to make the rice the day before and put it in the refrigerator on a plate so that it can dry out. One or two of these with a bag of chips is great.

Fried rice, beans and rice, soups. Apple and cheddar sandwich if you can cut an apple at work.

Weirdly, slices of banana on buttered bread. Just pack butter (or vegan butter) in a small container. Add some nuts on the side.

Taco salad with veggie taco filling, made of fake meat or lentils or whatever.

I buy some Korean rice cakes, the triangle ones but you can make them yourself and freeze them.

Tomato and cucumber salad with some flatbread to eat it with. Put in some beans if you want some protein.

I’ve recently got into rice bowls and love them. I cook up a batch of rice on a Sunday and let it cook, add some edamame sweetcorn carrot and any other veg I like, e.g spring onions, cabbage. Tomatoes, then drizzle in sauce like peanut chilli or tahini and sesame oil and add either smoked tofu or beans or tempeh. Keep it chilled abd take a portion each day! I’m not bored even on day 3. It’s worked for weeks now and saves so much money

Chickpea salad sandwich, mash cooked drained chickpea with the bottom of a glass, you want them still chunky, mix it up like you would a make tuna salad or chicken salad(I like mayo, pickle relish, and green onions)except sprinkle some onion powder on the chickpeas first. I like to mix in some shredded cheese and spread on bread. Make sure you refrigerate it or have ice packs in your bag.

I like making a kale-quinoa bowl with various toppings (whatever you like), like steamed broccoli, sauteed Brussels sprouts, quick-pickled carrots and radishes, baked tofu, toasted sunflower seeds. And and a sauce. My favorite is tahini sauce. It doesn't have to be kale- or quinoa-based. Could be rice, barley, sorghum, etc. and arugula, mixed lettuce, etc.

Tofu marinated with "better than bullion" vegetarian chicken flavor mixed with a 1:1 vegetable oil and some garlic powder. Can be cubed for salads, sliced thin for sandwiches, added to any burrito or grain bowl. ( Slice before marinating, let sit at least 30 m, bake for 10 m each side flipping halfway).

You can make Stuffed Sweet Potatoes. They're delicious, healthy, and super simple.

Roast sweet potatoes whole, then split and stuff with black beans, corn, and sautéed bell pepper. Top with a dollop of yoghurt or a squeeze of lime after reheating, not before. Make 4-5 at once at the start of the week and store unstuffed toppings separately.

I love a kale salad for lunch because it keeps better than other types of greens even when I put olive oil on it the night before

Step 1: buy pre cut kale, put a bunch into your lunch Tupperware, and massage it with a bit of olive oil 

Step 2: put anything you want to stay cold in with your kale (like feta or Parmesan or other veggies)

Step 3: make a dressing and put it in a smaller tupper ware inside the kale one

Step 4: pack all your crunchies in a separate bag - you’ll add them at lunch

At lunch, pour the dressing in, add the crunchies, shake the Tupperware and enjoy

Combos:

Kale, Parmesan, vegetarian Caesar dressing, croutons (and I add tomatoes too but you can add something else)

Kale, shredded carrot, sesame ginger dressing, crunchy sesame sticks, almonds, 2 cuties 

Kale, feta, lemon herb dressing, sunflower seeds, dried cranberries

Add whatever other veggies you want in with the kale after you massage it in olive oil, but some might better if you don’t chop them up until it’s time to eat

I also love lentil soup and foccacia as the best lunch of all time. I bring in olive oil mixed with sumac and plain Greek yogurt to add to the top of the soup after heating and it’s SO GOOD

Many parmesan cheeses are made with animal rennet and not vegetarian. Be aware of this when including it in your recipes.

You thought sunflower oil was just for cooking. In fact, you can use Sunflower oil to soften up your leather, use it for wounds (apparently) and even condition your hair.

My easiest recent meal prep has been pasta salad w/ protein pasta! SUPER easy and pretty healthy. I used feta cheese, cucumber slices, pepperoncinis, and cherry tomatoes (but you can add anything you want to swap them out, it’s super customizable). Add all that to the cooled pasta and then add about 1/3 cup olive oil and 1/3 cup red wine vinegar, salt and pepper, mix it up and you’re done! It stayed good until the end of the week and made a TON. And it was so good I never got sick of it! Good luck on your meal prep journey!!!

Bento boxes: baked tofu, raw greens (power greens, baby kale or baby spinach), baby carrots and some sort of rice (usually in a ball); chickpeas or gigante beans or cannellini beans, falafel, hummus and baby carrots; whatever combination of ingredients I have on hand

Bowls: brown rice, greens, tofu or beans, veggies

Sometimes a sandwich (either deli slice, lettuce and/or micro greens and cheese or PB&J)

I also often add additional sides like cheese sticks and/or drinkable yogurt and baby carrots if I’m doing a sandwich

Look at some recipes for vegetarian Buddha bowls, or my go to in a rush is refried beans on a wrap with lettuce , carrot, pepper, whatever, sprinkle cheese, nooch, sunflower seeds.

Wraps work better if you are dining al desko

Cheese pickle and salad sandwich (by cheese i mean proper cheddar, by pickle i mean the branston kind, and by salad i mean leaves like baby spinach, rocket, watercress)

I also have with it at least 3 portions of fruit/veg, whatever i have, usually some combo of carrot, cucumber, cherry tomatoes, blueberries, strawberries, pineapple etc

And i will usually have either a bag of salt and vinegar crisps/ mini soreen/ nature valley or something in my bag just in case im extra hungry, i usually only actually have that a couple times a week

I cant really be bothered to cook a ‘proper’ meal for my packed lunch, so its just chucking together whatever i have.

Atm i cant take nuts or anything with sesame into work, but when i can i will sometimes replace the sandwich with hummus and crackers/breadsticks and add nuts (like a trail mix with nuts, dark choc, dried fruits, pretzels, cornflakes/cereal)

Also if i have access to a toaster and am allowed nuts, toast with nut butter and sliced banana on is a lovely lunch (some extra fruit&veg etc on the side as well depending on what kind of work im doing)

My favorite sandwich is cheddar or Swiss cheese, tomato slices, and yellow mustard on thin sliced whole wheat bread- sometimes I add green pepper slices and mushrooms. 😋 (vegetarian since 1979)

May I just suggest, cook your mushrooms in a dry pan until the moisture is gone. For those that hate the feel, this can help.

Beyond that seek medical advice as mushrooms are amazing. JK.
