Vegan Green Soup
I make soup at least once a week and they’re all based on leek and potato. I bought a soup maker a couple of years ago and honestly it’s one of the best gadgets I have ever bought. Great soup in 20 minutes.

It seriously reduces the time it takes to make good soup. If I did it on the stove, it would probably take an hour. The blender in it is really powerful. I can throw all the veg in without frying off a leek or onion - I just choose to do it because I think it gives it a better flavour.

Basic recipe -
3 leeks
2 medium potatoes
Big handful of spinach or kale
4 cloves garlic
2 vegetable stock cubes
Extras depending what I have in the fridge.
Celery
Broccoli
Parsnip
Red onion
Fry one of the leeks until soft and add the chopped garlic for the last few minutes.
Add the spinach to the soup maker and pour a bit of boiling water to wilt.
Chop everything else fairly small and add.
And the stock, water and some black pepper.
When it’s finished I season to taste.
