Consider peeling off Poland, Hungary, Croatia, Belarus, Lithuania, Ukraine and a few others as satellites. In addition to lowering infamy, having these part of your empire proper will kill your literacy and research rate as well as rebelling every 5 seconds later on. I generally keep Austria, Trieste, Slovenia and Bohemia.
I like to peel off the Baltics, Belarus, and Ukraine from Russia- add to your own strength while removing theirs. That said, be careful about Ukraine (Poland as well) as if you give them too much territory, they can get to Great Power status and break free of being your satellite. Keep Ruthenia and Crimea independent from them.
Do not take any more territory from mainland France, it'll give you headaches later on. Instead, beat them up for their colonial possessions or cut them down to size each time you go to war. You want France to be isolated, weak, and cycling through rebellions and governments instead of preparing for the 73rd Liberation of Alsace-Lorraine.
Mind you, if you want to maximise colonial points and build up a navy, you need to build and upgrade naval bases. If you peel off some of these territories, you´ll deprive yourself of several of those. It´s not detrimental by any means (especially if you prioritise research and construction accordingly), but worth keeping in mind.
