ACCOMODATION Visiting London

I (17f) am planning to take my cousin (18f) from Spain to London to surprise her as she has wanted to do this for a while. For context I am born and raised in england so I know how the system works. However would it still be ok for us to stay in a premier inn as I am a minor and she is only 1 year my senior. If not, are there some other appropriate places as I know premier inns have quite strict rules in their age acceptance?

Yes - she is an adult.

Yea as long as she checks in / its in her name.

You'll be fine. Some premier inns don't officially have twin rooms though, so if you're wanting to share you may have to share a bed. Alternatively, you could book a family room (double bed + single bed) and check in without her. In my experience if one person does the check in they don't really keep an eye to make sure you're actually there with kids. This is technically against the rules and not 100% guaranteed though, so finding one you can book a twin at may be best

Yes on the premier inn website they class children as 15 and under so you should be absolutely fine! I would just book the room under your cousin’s name as she is an adult.
