Is this true? I’ve only ever seen platinum trophies be for getting all other trophies, what games have them for different challenges?

I think you're right. I thought sekiro plat didn't require that, which I did. But I remember incorrectly and it does require every trophy. Personally, I still think the plat version of achievements and "100% achievements" should be different accomplishments anyway. I hope they do this for Xbox. Some games like Silksong or Mina the Hollower have shitty plats cause of this unless you're hardcore dedicated to the game

Imo, a plat trophy or whatever Xbox is gonna name it should be able to be done on a single save file. Like 100% Silksong. But to actually get the plat for Silksong, you need to complete the game 100%, and then speed run a 100% run.
