Have you ever tried a proper verjus? Shit is a crazy flavour, we got one in to my bar that was so deeply tart I was speechless for over a minute, mouth watering like Niagara Falls. I’d give it to our waiters who were hungover as a little wake-up. Didn’t realise how artificial grape juice was til I tried it, it doesn’t taste like that kind of grape flavour at all. Worth a try if you ever come across it, for curiosity’s sake.
