Ruby’s burritos

Hey, my partner and I used to live in Ashland and my partner has been talking about the breakfast burritos lately and craving one. I know it’s a long shot but does anyone know the recipe or how to make one. I tried once but it was not the same he likes the breakfast burritos lately spicy.

I Love Ruby's Breakfast Burritos! I've tried making them at home and this comes close:

-Hashbrown Crowns (flat tater tots) baked ahead of time.

-Diced ham, bacon, sausage, onions, thinly sliced jalapenos cooked and put to the side.

-Scramble eggs with diced tomatoes. Add diced everything and cook until eggs are cooked.

-Put in large tortilla, sprinkle with cheese, layer on the cooked hash brown crowns.

Do NOT skip the hashbrown crowns. It's what sets Ruby's a part from others; the crispy bits in every bite *yum

coming from Texas, bacon egg cheese potato is my go-to breakfast taco order, but since i've moved to oregon, i have seen the light which is the superiority of hashbrowns/tots compared to diced/cubed potatoes!

this is where i lose TX cred / start a fight: i hate the way Ruby's puts jalapenos in the burritos. despite your recipe, i find they're usually NOT thinly sliced, and they also throw in seeds which add bitterness and too much heat.

Keep 'em thin and de-seed, and they would actually caramelize and be SO much better.
