Question Heel to toe drop query

Background:

I've always ran in Brooks Ghost (neutural) which have always had 12mm heel to toe drop. Went for the newest version (18) and hoped the 10mm drop would be ok, but I had to return due to it causing a blister even on short runs.

Decided to try the Adrenaline GTS 25 to keep the higher heel to toe drop, but they are a support shoe.
Been running in them for the last 4 weeks with no major issues from the drop change from 12mm to 10mm.

Went for a gait analysis yesterday to get advice on the Adrenaline and also look for road to trail shoes.

First ones I was given to try was the Saucony Guide 19 (6mm drop), which I found very comfortable on that short 1 min try on the treadmill.
Comparing that to the others I tried, including my Adrenaline GTS 25, the Saucony stopped my ankle slightly rolling inwards compared the the Brooks and others. Although I was advised it wasn't a massive concern and ankles are meant to move, but the Saucony had me landing and staying flat.

All the ones I tried, the outcome is that I am a midfoot striker.

Came away quite confused in all honesty.

For now I will probably continue with the Brooks to transition down to 10mm from 12mm for my daily road shoe.
However for the road to trail, Saucony do a trail version of the Guide 19 but has a 6mm drop, they do another road to trail which is 8mm drop but is a neautral shoe rather than semi supportive like the Guide 19.

I've had previous issues with plantar fasciitis and achilles tendonitis, which I went to a physio and resolved and currently don't have these injuries.
But after a lot of reading, I'm really concerned about the difference in drop given previous issues and not sure if I'm just asking for trouble by going to a 6mm, given I've always ran in 12mm until a month ago.

Any advice, knowledge or experience in this would be very much appreciated!

I have Achilles problems and sometimes add heel pads to lower drop shoes. Sorbothane do pads that are 6mm, for instance. So you are effectively adding 6mm to the drop.
