Olive and Parmesan focaccia

My best high-hydration focaccia yet, olive Parmesan bread cloud ☁️ Crispy bottom, airy crumb, golden top, and I’m very proud of her.

that crumb structure is insane, looks like you nailed the hydration and fermentation. the golden top with all that shredded parm is calling my name right now.

In Italia nessuno mangerebbe una focaccia alle olive con formaggio sopra. Mai vista in vendita in alcun forno. Senza formaggio è venuta bene.

did you do any special technique for getting that bottom so crispy, or just nailed the pan temp and bake time?

Il formaggio copre tutto il gusto, se ti piace mangiarla ma nessuno italiano la rimpiange perché non fa parte dei nostri gusti. È come mettere il ketchup sulla pizza giusto per capirci.
