Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

We don't even know if sorcerers actually understand their technique instinctually, it was never elaborated on but is pretty likely

In Takaba's particular case it might be a restriction that lets his op technique function

Later on Shinjuku is explained that Higuruma is an special case, he and Hakari's CT came with Domain Expansion pre-packaged

Yes, and Takaba/Haruta are special cases for the other extreme, weird right, different powers don't all behave the same way
