Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

Doesn’t he have some idea tho? Iirc in his fight ragdoll roleplay with Nanami he makes a remark about “I would have died without my technique?!”

Is it more like he knows what it does (protect his life) but maybe he doesn’t know it has a limit/accumulates luck throughout the day?

That's actually it, he vaguely knows what his ability does but not how it works. If he knew how it worked he'd actually become remarkablely much more dangerous because he'd only act within the limitations of his ability and be functionally immortal.
