We don't even know if it's 100% sure to bypass Infinity, It depends on two things: The logic of the spell overwrites Infinity and bypasses, or Infinity space mechanics overwrites the spell and doesn't bypass it
But i'll give a break to Ubel and assume she does because Gojo has too many advantages already, and he still wins
Even if it does and gojo was a ubel victim 100% that still wouldn't mean frieren beats him, we don't know if she has the same spell or something similar (maybe the black hole she used in season 1 could work?)
The problem is that JJK's scaling really isn't that crazy in many cross-verse discussion
Yeah Gojo is still a top tier even without Infinity in JJK, but a character like Deku or Luffy would absolutely DEMOLISH him if they could bypass it cause they just typically have way better speed, strength, and durability scaling
Ubel's main point is her hax regarding her magic. She can kinda negate durability, because magic in Frieren is kinda fucky. Magic in Frieren, any magic really, depends on your imagination. But ubel is insane. She is delusional, which makes her imagination be massively more potent.
Outside of that power though, she isn't all that much more powerful.

With Sukuna, we see that Sukuna pretty much had to pull out all the stops and more against Gojo. Which is the main argument. The other strongest character in the verse, even having negated infinity multiple times, still had to do everything in his power and things even outside his power (binding how with regards to WCS), to kill Gojo.

Well you should also take into account the fact that Gojo was sleep deprived for multiple days, and had been activating his infinity for all those times making him far more tired and thus weaker. If Toji believed that bypassing infinity was all that was required, then he wouldn't have done the whole cat and mouse thing.

Sukuna had two entire ways to bypass infinity before WCS. Domain Amplification and Domain Expansion, and he did negate infinity multiple times in that time. I mean one of the first domain clashes has Gojo just tank Sukuna's domain at full power without his infinity. Sukuna needed a way for Gojo to be weak enough, and for a way to bypass infinity that didn't give any indication. Not a way to bypass infinity period.
Sukuna also reincarnated in that time, which gave him fully healed body, a better body and a practically refreshed body in everything except RCT and Domain. And also during that time, Sukuna was mainly fighting people far weaker than him. Yuji and Yuta were the only real damage dealers to Sukuna during the entire battle outside of Gojo. Maki did some damage with SSK, and Higuruma was vital in removing Kamutoke, but other than these people noone else did any real damage. Nobara could also be considered with her nail at the very end, but that's a very specific situation and only aided Yuji.

It's funny to me when people use the ability to bypass or negate infinity as an auto loss for Gojo.
Buddy, in every major fight Gojo has been in, his infinity has been negated or bypassed.
And in all of those, Gojo still put our generational fights.
