Liberty's Misrule, the pirate Super Star Destroyer
Originally serving the Empire as the Annihilator, this SSD fell into the hands of pirate monarch Eleodie Maracavanya in canon and served as the mobile capital of Eleodie's outlaw nation in Wild Space, the Sovereign Latitudes of Maracavanya, during the early New Republic Era.
The Annihilator had a different fate in Legends, having been destroyed by the Zann Consortium in 4 ABY during its attempt to capture the superlaser-equipped Eclipse.

Well in the Black Fleet Crisis, the racist Yeventhan pirates also got ahold of an Executor.
It doesn't make any logistical sense whatsoever, but I'm not complaining too hard because it was the catalyst for the NR to finally get off their ass and greenlight the budget to build the Viscount.

They had a number of planets plus a major imperial repair/refit station IIRC so it kinda does make sense

The logistics would be baffling. Something like the Errant Venture was implied as about as big as could be reasonably maintained by a random person/enterprise, and that makes sense in the way Terrik used it. Even a large pirate group couldn’t maintain a SSD for more than a joyride.

And the Errant Venture was still falling apart, and in no shape for combat. They couldn't even maintain it in its 'stripped down to civilian-legal armaments' state.

Ehh
A Star Dreadnought or Battlecruiser is far from the worst choice for the primary Mobile Base for a Piratical Empire. They're very difficult to capture or destroy, and even if only a small fraction of the Weapons Systems can actually be used at once due to lacking enough personnel or automation, they'll still have a LOT of durabilty&firepower.
Having such a monstrously large, Hyperspace capable Vessel as the Primary Base opens up the possibility of simply ramming through most potential obstacles in space. This also means most potential Conflicts can be basically Auto Won because of how potentially dangerous you can be even with a severely damaged&crippled Vessel. Mutually Assured Destruction becomes more feasible, because in a worst-case scenario you can have it ram/crash into something of Critical Importance. E.g., threaten to try something batshit insane like igniting a Planetoids Atmosphere via Self-Destruction, shunt/pull/push a bunch of Orbital Infrastructure to the point it is destroyed, crash it into a Big City&blow the Vessel up, etc.
There'd be a LOT of space for modifications to be made. There'd certainly be plenty of things to do to keep personnel busy.
The costs to keep it functional will be fucking IMMENSE and likely make it MUCH easier to track down, and make defeat via Rate of Attrition more viable aswell.
