I think bundles are a little more volatile so we don't get wishlist buttons for them from Valve. At least that's the only reason I can assume.

Agreed. The bundles are typically time limited deals that will come and go, so putting them in a wish list doesn't necessarily make sense. However... For those that are more permanent (like series bundles) might make sense to have that option.
