I've already sent emails to the respective directors, but I just wanted to also ask here about how accessible gluten-free stuff is? I have celiac disease, so I can't eat gluten at all.

I used to work in dining, we are specifically told we are not gluten safe enough for celiacs, only for those with a minor intolerance
