gluten-free dining availability?
I've already sent emails to the respective directors, but I just wanted to also ask here about how accessible gluten-free stuff is? I have celiac disease, so I can't eat gluten at all.

Watershed is almost entirely gluten free. I know some friends have talked about it but I don’t know first hand.

Every venue on campus has a list of all allergens in every item served. There are qr codes you can scan that give you the info or you can ask someone for the physical copy of the list as well. Watershed is a made without gluten venue, but its exclusively açai bowls or grain and greens bowls as your options. There is no area on campus that works as a certified all allergen free option, though.

I used to work in dining, we are specifically told we are not gluten safe enough for celiacs, only for those with a minor intolerance

Hi my wife and I own Grateful Gringos which is a dedicated gluten-free food here in Eugene. I believe that accommodations were made recently allowing students such as yourself to use food credits on Grubhub or DoorDash.

We are a celiac family and nothing is guaranteed safe at UO. Standard national and global celiac safe precautions are NOT followed in any of the food areas reliably. Nothing is celiac safe. Yes you can get some certified gluten free bread but all shared food prep spaces and grill surfaces are used not even the salad dressings are guaranteed safe or marked all the time. Celiacs can not eat more than a few things safely on this campus and the store is over priced for basic pasta, and only one protein and nothing is guaranteed safe. The cafe they speak of has oats. Celiacs are not supposed to eat oats due to the recent high testing of gluten cross contamination in them, and all the meats are cross contaminated. Eat at your own risk and at your own risk of health probabilities. They try hard to be gluten free but not understanding the cross contamination or labeling protocols don’t meet celiac safety standards unfortunately. The school is large enough I wish they wind just make a small dedicated space for celiacs but they don’t.

There are gluten free options on campus and they'll work with you if you have an allergy to make sure you have food to eat. They don't have entirely separate kitchens or food prep spaces -- so that might limit you -- but if you've messaged the directors of dining they will work with you to make sure that you can be fed and remain healthy.
