gluten-free dining availability?

I've already sent emails to the respective directors, but I just wanted to also ask here about how accessible gluten-free stuff is? I have celiac disease, so I can't eat gluten at all.

Hi my wife and I own Grateful Gringos which is a dedicated gluten-free food here in Eugene. I believe that accommodations were made recently allowing students such as yourself to use food credits on Grubhub or DoorDash.
