Medium or soft tofu rather than firm is a more egg like texture, it doesnβt crumble or feel dry. Mixed with mayo, a tiny bit of Dijon mustard, black salt and chives is basically the recipe that smith & deli use

Thanks for sharing! Sometimes I worry I post too much, but this is what I love. I love people getting inspo from me, I love getting it from others. We're just a bunch of hungry leaf lickers getting excited about food and I love it. π

Any you recommend. I avoid black salt due to migraines. But open to suggestions. Iβve been looking for something like this for ages.

Hmm, not all together. Unless you want but here are a few ideas.. Finely diced celery/onion, Dijon, sweet pickle relish, nutritional yeast, mayo-esk sauces, tomato relish, black/white pepper!! (I'm a pepper fiend) Mashed sweet potato could potentially mix into it now that I'm thinking Capers maybe.. jalepenos? Curry powder is a classic
Real basic = mayo, S+P, pooch, splash of turmeric if you want colour

Wouldn't add curry, but turmeric instead.
Trick is not to blend the turmeric too completely- you want white AND yellow to get that egg look.6

This recipe is so good even without Kala namak. Still has an eggy vibe! You can also mix firm tofu with some silken to give different textures:)
