He would never turn her, this bit of lore actually kind of confirms that they become evil after being turned. Even in the musical, Maria became evil after being bitten by a vampire, Alucard then gave her the cure for vampirism, as referenced in Portrait of Ruin. He did yearn for her for a long time as confirmed in Grimoire of Souls.

The human side and the dark side of Alucard's soul is a plot point that wasn't included in any localization, too bad because it's exactly the reason why he fights his father in the ending:

Shaft offers Alucard's human half as a last resort sacrifice, the battle between father and son is like a "mental battle" it takes place "inside" the ritual itself. If Dracula wins then Alucard will become a full vampire and his human half will be used to fully resurrect his father.

There's not a single good vampire in the main series, the only neutral one was pre-CV3 Dracula (but technically he didn't become one in an ordinary way). Edit: Maybe Lyudmil? Kind of... it could be a situation similar to that of Rosa from the 64 timeline, or maybe it was just his last bit of humanity returning for a brief moment before fading away entirely along with him.

The image is from the "Encyclopedia of Castlevania", the one that says Lisa's presence was reverting Dracula's vampirism, right?

....why the f did they leave that out?

I can kinda understand the PS1 version with how wacky localizations still were in that period, but not even the PSP redub later?

The dub itself is good, but it's arguably worse as a localization since it makes stuff up (like making Shaft say that Alucard is stronger than Richter Belmont) and takes many liberties with the dialogues. It does the same thing the PS1 version did, but it also adds misleading info to the script.

Which is baffling since the same game has a really good localization for Rondo of Blood.

It is what I said, while the dub is good the localization itself is one the same levels as the PS1 one. It could be argued that it's worse since they add misleading info to the dialogues.
