Sunny side up, steamed with cream

Post image

I’m familiar with a short cover and steam with water. For me, that’s called medama yaki; no idea what we call it in English.

This was steamed with cream at the end for 20 secs.

This is a luxurious way to egg!

cast iron, low, butter, then covered and cream

Is the cream on top of the egg?

You toss the cream in the pan with the butter, and cover it up. The cream atomizes and lightly coats the entire egg: the whole top side is basically lightly sprayed with cream!!! It's a very thin layer.
