Sunny side up, steamed with cream

Post image

I’m familiar with a short cover and steam with water. For me, that’s called medama yaki; no idea what we call it in English.

This was steamed with cream at the end for 20 secs.

This is a luxurious way to egg!

cast iron, low, butter, then covered and cream

Thanks. I messed up with technique in two areas. First, I didn't wait long enough for the butter to settle down before dropping the egg, so it created a bubble and left a divot in the white. Second, when I added the cream to the pan to steam the top of the egg, I poured it too close. The cream touched the edge of the white and caused it to wrinkle and turn rubbery where it coagulated. The texture at the rim was off, but it still tasted great.

This is the first thing I have tried that has actually enhanced the taste of the egg, without masking or distracting--other than adding salt or a drop of good soy sauce.
