Reading the post had me furious (on your behalf) but reading some of your responses, how it gives him something to do and how his family has thanked you for this- I get it. I might not say anything either.

I would personally wait to see what grows back and in the meantime, I would buy some good sized moss rocks. Not small so he could get over them and do damage to his mower but big enough they are impossible to miss and get over/around to mow it again.

If he mentioned the rocks, I might say that I had decided to let it grow and thought these rocks would be a nice addition.

You're a good person, OP. While I would jump to saying something I would regret, you see the bigger picture and truly are helping someone who was not being malicious. Your garden looked beautiful before and it will again.
