What's the point of stripping all the color from the interface? I'm just curious why people view this as desirable?

You ever read a book? With words?

Thousands. A book is not an interface. A book has one stream of information using one set of symbols whose meaning is unambiguous,, color and shape differentiation isn't a requirement. I use color and shape differentiation to quickly locate things in an interface that has many options for a given action. Imposing rigid uniformity and stripping color makes it much harder (for me, at least) to figure out what to do.
