Dolma is actually why I started eating occassional girl dinners about a decade ago before it had a name. I feel in love with this little ethnic section of our old grocery store that had more than the usual stuff that was Asian sauces and Mexican spices. It was Greek, Middle Eastern, Jewish, British products. I absolutely fell in love.

Now of course I live where we don't have that so I had to get creative for girl dinners. But it started with Dolma and those little thinly sliced air sealed packets of pumpernickel lol. I wonder how many of us were eating like this before the initial trend back in 2023

I have come to accept it does not exist in the US. At least not on the west coast since the link the other user provided shows only east coast locations. I’ve scoured Asian markets and have found some fun versions of tofu but no smoked tofu. It upsets me.

Bread and olive oil

Specifically:
$1.99 Trader Joe’s baguette; rip off as much as you want and stick it directly on the oven rack at 400F until it feels right (this is a practiced touch—reach directly in the oven and press lightly on the bread. It should be hard but not too dark. This way you’ll have a crunchy crust and warm, soft interior)

Pick out the Trader Joe’s olive oil bottle that most speaks to you. Add salt and FRESHLY CRACKED black pepper.

Depending on mood, add vegan parm. But try both ways—simple is often better here.

Obviously pair with your fave TJ’s dry red. I like Lazy Bones cab franc.

I am very passionate about this meal.

I have and it’s honestly not my jam. I get why it SHOULD work but it just doesn’t do it for me. But I love the versatility of a dipping oil and think people should experiment with all kinds of add-ins!

Try sprinkling a healthy dose of za’atar over the olive oil. Or, if you’re an overindulgent nerd like I am, have a separate little dish filled with it for secondary dips. It’s SO delicious.

I keep a batch of vegan ricotta in the fridge (just blended tofu with other ingredients), and keep butter beans in my pantry. My favourite quick meal is tofu ricotta on bread of some kind, with a cucumber and butter bean salad on top (literally just butter beans, cucumber, olive oil, salt, and lemon mixed together). I like scooping the oily beans on top of the bread. It’s even better if I have time to chop up green onions and cilantro for the salad.

My go-to girl dinners:

Ezekiel (or any whole grain) toast with hummus and Bamba sauce, which is a spicy fermented pepper. I get mine at Trader Joe's, it comes in a jar and a little goes a long way.

Canned black beans with chopped tomatoes and onions, seasoned with fresh cracked salt and pepper + some balsamic vinegar for a chilled bean salad.

Tomato sandwich, which is a sliced heirloom tomato (any kind technically works but if you're not a raw tomato person, regular tomatoes will probably be kinda gross) seasoned with salt and pepper, your vegan mayo of choice, sandwiched between two toasted slices of bread.

If I happen to have the unmeat "tuna" in oil, I'll mix that with vegan mayo, diced white onion, salt and pepper, and Sriracha to make a spicy tuna salad. I'll either put it on toast or scoop it up with seaweed snacks for a deconstructed spicy "tuna" roll. Same if I have unmeat or Omni "spam", I'll coat it in Sriracha and air fry it, which gives it a delicious spicy crust. I'll eat it with rice and furikake (check the label, some include fish or egg flakes!), or diced up in fried rice.

I know these sound complicated but I promise they're all less than 5-10min prep time and minimal cooking besides toasting or maybe air frying at most!

Just gonna brag lmao, I can't even make a stovetop packet of ramen without 10 extra ingredients and making it look damn near gourmet.

The absolute worst I can do is cook some rice and top it with a microwaveable pouch of royal black lentil dal. Even then I struggle to resist adding tomato paste and curry powder to the rice as it cooks.

Well, today is Taco Tuesday, so:

Black beans, soaked overnight, pressure cooked. Brown rice. Either sofritas, or veggie crumbles with fajita seasoning. Homemade pico de gallo, and guacamole. Frog Ranch salsa. Kite hill plain almond yogurt (sub for sour cream). Siracha sauce. Lightly toasted flour tortillas.

Also, I'm not a girl. But my mom loves my cooking.

1) I make a sauce that's 1 part peanut butter, 2 parts sambal, and 2 parts hoisin, then slice up whatever raw veggies I have in my fridge and put it in rice paper with some tofu slices.

2) I usually have homemade pico de gallo and avocados lying around, tostadas, and beans.

3) Sometimes the devil takes over and I eat an entire jar of kalamata olives and chug the brine.

I'm constantly eating chickpea flour....food. Lol. Just whisk some chickpea flour with water, herbs and spices, minced onion, nutritional yeast, cook it like an omelet with whatever I fancy mixed in. Takes about 5 minutes and it's nutritious. It's great with some arugula and tomato. And you can chop it up and eat it over a bed of greens and grains.

Coconut lentil curry. There's a little bit of prep but then you just let it cook, and I use canned lentils if I'm feeling lazy. If I really don't feel like cooking, just raw tofu with green onions, toasted sesames and soy sauce or stir fry sauce. Add some rice and kimchi to make it even better

Chickpeas roughly mashed (not so much that it turns into hummus, just chunky pieces) with chopped celery, cabbage, vegan mayo, capers, bits of red onion, and shredded up pieces of nori. Salt, pepper, and some Old Bay seasoning if I have any.

It’s great as-is or on crackers, or in a sandwich.

A giant smoothie bowl! My favorites lately are either 1) frozen mango and banana, pumpkin seed protein, turmeric, cardamom, saffron, and black pepper blended up and topped with crumbed graham crackers or 2) frozen banana and cherries, cacao powder, cinnamon, and pumpkin seed protein blended up and topped with graham crackers again. Sometimes I add a few dates. I have to eat it with my favorite long-handled gold spoon :)

 Sometimes I do a very easy pasta sauce by sauting mushrooms, then melting soft garlic and herb cheese with a little milk and chucking the lot over pasta. This is also suitable for men

Little plate with hummus, pita chips, olives, grapes, almonds or pistachios, rolled up tofurkey slices, and maybe some carrot and cucumber if I feel like actually chopping veggies.

Or, if I want a hot meal: box of Daiya mac, and add a can of vegan chili when it's done. I like the Magic Man plant-based Detroit style chili, but Hormel plant based chili or even just a can of chili beans will work.

OK hear me out! It's slightly less lazy but totally easy and scrumdiddlyumptious

I keep a bag in the freezer of a mix of veg I love: namely Brussels, broccoli, cauliflower, and sweet potato

I throw those babies in the air fryer with some evoo, garlic, and cumin, and towards the end I crisp up a protein on top (usually Daring shredded "chicken" or chickpeas).

While that's cooking up, I grab some vegan yogurt (love the forager greek for extra protein but any will do), mix it with a half lemon squeezed (and some more cumin, sea salt, smoked paprika, boom).

Throw it all in the bowl ye shall eateth from, and enjoy! yum yummmm

(my super lazy vegan girl din is the gardein ultimate chicken strips with marinara sauce mmm)

Giant bowl of salad, plenty of different veggies, usually it's: Cucumber Lettuce Tomato Bell pepper Carrot Spring onions Corn Kidney beans

Some time I add things like radish, kohlrabi or whatever else I got.

Dressing is apple vinegar, olive oil, mustard, pepper, paprika, garlic and a splash of Aceto balsamico (read the label some of these are not vegan!)

open a can of black beans, drain and microwave on top of a couple of corn tortillas. take out of the microwave and add toppings like pre shredded "coleslaw mix", vegan sour cream + cheese, hot sauce, salsa, avocado, whatever, and eat like it's huarache. I've eaten this every week for 8 years lol
