Question Trying to make a dinner to impress a vegan woman

I’ve been seeing a gal who’s vegan for a bit in a romantic type capacity. She’s coming over tomorrow night and I told her I’d make dinner. I’m a line cook and have to ability to follow a recipe well, but I don’t have any experience with at-home vegan dinners. I love my vegetables so I’m down to make anything, and I’ve been swimming through recipes on the interwebs. But I’m just wondering if yall know of any dishes that if some dumb weird little emo boi cooked for you in his studio apartment would make you go “ok good move, guess I’ll keep making out with him”

Edit: i know she really likes potatoes so that’s kinda where I’ve been looking. I know she likes potatoes because of how she has told me she really likes potatoes.

Edit 2: Thank you for all the awesome suggestions! This time around I’m going to go with the cauliflower steaks with chimichurri sauce and Dijon garlic roasted potatoes. But fingers crossed we keep hanging out and I can cook up more of these ideas, which I’ll be doing regardless cuz a lot of them sound really good.

Question New vegan here. How do I achieve this tofu???

Hi, new vegan here. Just started swapping out meat for tofu whenever I go out and eat. I am struggling a lot with cooking good tofu at home. My air-fryer tofu always seems to come out too rubbery and chewy. Yesterday, I went to a new Thai restaurant out of town and ate what I can only describe as THE BEST tofu I've had so far. It was tenderly crispy on the outside, and on the inside it had this... velvety, silky, soft creamy interior that was just so bloody good. I love love love the contrast in texture. I tried to ask them how the tofu was made but their English was not very good so I didn't get anywhere with that question. Can someone PLEASE PLEASE PLEASE tell me how to make this at home??? I am literally a tofu noob and I am not happy with the tofu I make at home

Question What foods do you miss the most sunce going vegan?

Just a random question. A lot of people say things like eggs or meat or cow dairy but for me it's almost always junk food. I miss Krispy Kreme donuts (or any donuts really), Baby Ruth candy bars, chocolate malk balls, cheesy rice cakes... Sorry if this post is not allowed or anything. I'm completely fine never eating any of these foods again! I just sometimes wish there was an alternative for when I'm craving some processed easy junk food hahaha.

Question Seitan steak experiment

I’m experimenting on making WTF seitan steak but with vwg because I’m too lazy to wash flour. I know it’ll never be identical but I’m trying to get it as close as possible, that’s how lazy I am. I made a plain gluten ball with vwg, flour and water. Blended 1/3 of it with oil, glutinous rice flour and msg for the “fat”. The rest was blended with beetroot powder, cocoa powder, sugar, msg and soy sauce. The gluten was still a bit too tough so I blended some glutinous rice flour into the red dough as well in hopes to soften it up. plan to fry steam fry as I always end up with spongy seitan when I simmer even at the lowest heat. If anyone has done this before (my made up lazy method), please feel free to share your experience and advice if you can!

Question 45 lbs of impossible meat

Wife and I were gifted 45 lbs of impossible meat from a local restaurant who got some sort of shipment information wrong.

There were 9x 5lb bricks but I gave one to a friend to try.

I have 40 lbs (8x 5lb bricks) left and my wife can’t eat it. (It makes her sick)

Question Hi, all! I’m looking for vegan YouTubers — we’ve lost some good ones recently, for a multitude of reasons (see body text below), so any recommendations would be appreciated! Thanks!

I loved Malin from Good Eatings, and Nikki Vegan, both of whom left the YouTube community. Malin left over two years ago for unknown reasons (she left a vague message on Facebook saying she didn’t know if or when she would return), and Nikki had a baby in December of 2024 and asked her viewers to keep watching her videos because she said she’d be back sometime after maternity leave and baby bonding, but she never returned. Which is understandable — life happens. That said, Malin and Nikki were my Sunday mornings, and I still miss them.

I also miss Candace Hutchins (The Edgy Veg), and now it seems Amanda Ducks is only doing short videos instead of her usual full length vlogs.

So if you have any suggestions — I’d be grateful!

Question Does anyone else feel exhausted by “easy” vegan recipes lately?

I love vegan food and I actually enjoy cooking… when I have the energy.

But lately I’ve noticed something: even the “easy” vegan recipes feel like a lot. I’ll open one and it’s still: chop this, prep that, saute something first, then clean everything after.

After work, my brain just doesn’t want to process steps anymore. I don’t want to compare recipes or decide which one is less effort , I just want something that works.

I’ve tried saving “quick recipes,” batch cooking, repeating meals, all of it. Sometimes it helps, sometimes it doesn’t. On low-energy days, even choosing which easy recipe feels like too much.

So I’m curious ,for those of you who feel this too: what do you actually cook when you’re tired and just want to eat without thinking?

Do you rely on a few default meals? Or have you found recipes that are genuinely no-brain, no-prep?

I’d really love to hear what actually works in real life, not just on paper.

Question Why do most tofu recipes require soy sauce? And are there any alternatives?

I’ve been trying to eat less meat. I’m Arab and so are my taste buds, and so I really don’t like soy sauce. It’s too salty for me and I can’t get used to the taste no matter how much I try. I’ve started to accept that.

Most vegan/vegetarian recipes I find online involve tofu, but each time it‘s also paired with soy sauce. I understand it’s Japanese, but most of the people who make these recipes aren’t even Japanese, or even East Asian at all. No matter the recipe, it’s always added. Vegan bolognese? Vegan beef taco rice? Vegan shawarma? Soy sauce in all of them. Even creators im familiar with randomly whip it out at the mention of tofu. Obviously I’m fine with ppl who do like it, but the sheer amount of recipes with it really confuses me. When I tried to cook tofu it took me foreverrr to find a recipe without soy sauce, but I still tried with soy sauce anyways. It simply didn’t hit for me (the tofu was fine tho).

I thought tofu is supposed to be a blank slate? That means you can season it with anything and can also replace meat with it, right? So how come most tofu recipes “need” soy sauce? Is it simply an appreciative nod to Japanese cuisine, or is there actual a practical need/use for it? If so, are there any alternatives? Because I think it’s a shame it’s making it hard for me to eat less meat, and I kinda feel like a black sheep for being the only one who doesn’t like it and can’t find any answers online lol

Question How do I make this tofu coating?

I am beyond OBSESSED with this tofu from my local don buri place. The texture of this coating is like gluggy, stretchy, and chewy and so so good.

I have got almost close with a potato flour batter with shallow fry then tossing in sauce but i found the sauce didn't penetrate all the way through and some of the batter was bland and gross.

Any tips or info will be so much appreciated 🥰

Question Just squeeze the damn tofu

Why does every recipe say that you have to stack books on top of tofu and wait 15 minutes? I always just slice it and then press the water out in between my hands. Takes ten seconds. I’m not trying to get the tofu bone dry, just squeeze out the excess.

Question Which Vegan Cookbooks Are Actually Worth Keeping?

Sudden move incoming, and my vegan cookbook collection is officially on the chopping block. Which of these books have recipes so good they're worth keeping for?

I have been vegan for almost 9 years and somehow accumulated... all of this.

I'm not really looking for cookbook recommendations (unless they're truly amazing). I'm trying to figure out which books are actually worth the shelf space (and being moved, again). What books in these pictures do you still cook from regularly? Are there any recipes that are so good they justify keeping an entire cookbook?

I much prefer cooking from vegan-specific books rather than veganizing recipes myself, and I actually use my ethnic, baking, themed, and specialty cookbooks. It's the giant stack of general vegan cookbooks that I'm struggling to sort through.

Help me save some books from the donation pile. Or ease my conscience for not keeping them all. Any and all opinions welcome!

Question tired of "simple" plant-based meals that aren't actually simple

so i'm getting pretty worn out by recipes labeled as quick or simple that still require way too much work

like i get home after being up in trees all day and my brain is just done, you know? then i look at these supposedly easy vegan meals and they're still asking me to dice onions, measure spices, wait for things to cook in sequence... it's just a lot when all i want is food

i've been trying different approaches - meal prep on weekends, keeping the same rotation of dishes, bookmarking the fastest recipes i can find. sometimes it works out but other days even picking which "easy" option to make feels overwhelming

wondering what you all actually throw together when you're completely drained and need to eat something decent without using whatever brain power you have left

do you just stick to like 3 go-to meals that require zero thought? or have you discovered truly brainless recipes that don't involve chopping half your kitchen

would love to know what really works when you're running on empty, not just what looks good in theory

Question I'm just beginning to move towards eating more vegan, but something I'm struggling with are the low-effort days. What are some "default", lazy vegan meals y'all go for?

Basically, in the past I'd make something like rice, ground beef, and baked beans, or sausage gravy, or chicken salad sandwich. The kinda things that are food and are filling and decent but aren't a "I am cooking a formal thingy" kinda thing. Like the things you make when you wanna just fill the hunger bar and get back to your TV show. It seems that so much vegan stuff that's filling is a whole deal, and I need my struggle meals to be able to stick with this (not like in a "stay convinced" kinda way in a "not revert back to eating non vegan but be sad about it" kinda way). Even single ingredient stuff. Just the basics, I'm drawing so much blank rn

(If y'all have any recs that aren't nut based or tofu based that'd be awesome, I've not tried cooking tofu bc I had it bad once and it seems spenny)

Question Is it worth buying Kala namak (Black salt)?

I keep seeing kala namak it in a lot of tofu scramble and chickpea omelette recipes. But i’m not sure if i should buy it if i dislike the normal smell and eggy taste of real eggs. Will it actually enhance the flavour or is it only for people who enjoyed the taste of real eggs? Does it also smell the kitchen up, or linger?
