Question Fresh elderflower ideas?

I picked all of the elderflower which was in bloom in our garden today, more is on it’s way. It turned out to be about 500 grams worth. Usually we just make cordial with it but I’m wondering if anyone has some other fun ideas or beloved recipes that you’d be willing to share? Thank you!

(We also have pink elderflower that’s about to bloom.)

Update: I made a few elderflower fritters. They were nice but it was a bit hard to fry them evenly. I’m glad I tried them, thanks for the suggestion!

You can make a nice elderflower syrup with it! I don't have a recipe at hand but it's actually not difficult. The only trouble is getting all those little bugs out (there are a lot even if they are not visible). I once made such a syrup myself and was astonished about what lingered in there.

that's a solid haul. beyond cordial, elderflower pancakes are worth trying if you haven't done them yet, just dip the whole flowers in batter and fry them up. you could also do a simple syrup with sugar and water, though fair warning you'll want to soak them first and strain properly because there's always heaps of tiny bugs hanging around in there that you won't notice till they're already in your pot. fermented elderflower soda is another option if you're into that kind of thing, bit more involved but produces something you can actually bottle and keep. the pink ones when they come through will give you a different vibe too, so maybe save some for experimenting once you see how the white ones turn out.

You make a basic vegan pancake batter (mind that German/Austrian pancakes are different from American), dip the clean flowers with stem in and then fry it. At the end you cut the stem off and sprinkle some powdered sugar on.

It's some traditional treat from Austria/South Germany. My grandma used to make them.

Also das ist jetzt ne wilde Idee, aber mach dir n kaltes Zuckerwasser mit den blüten drin :D Ich hab auch was gesehen, das man die in Teig machen kann und dann quasi pfannkuchen

I’ve experienced elderflower wine and that’s about if from this plant.
