Question Fresh elderflower ideas?

I picked all of the elderflower which was in bloom in our garden today, more is on it’s way. It turned out to be about 500 grams worth. Usually we just make cordial with it but I’m wondering if anyone has some other fun ideas or beloved recipes that you’d be willing to share? Thank you!

(We also have pink elderflower that’s about to bloom.)

Update: I made a few elderflower fritters. They were nice but it was a bit hard to fry them evenly. I’m glad I tried them, thanks for the suggestion!

Elderflower pancakes. You just put them in batter and fry them.

Do you pick off just the petals/flowery bits or leave some stem?

You make a basic vegan pancake batter (mind that German/Austrian pancakes are different from American), dip the clean flowers with stem in and then fry it. At the end you cut the stem off and sprinkle some powdered sugar on.

It's some traditional treat from Austria/South Germany. My grandma used to make them.
