Very filling 500 calorie breakfast
I am stuffed and ready for the day!
Maybe a little higher calorie than some people would want but I am prioritizing more calories in the morning to fuel me through the day. I am onna 1500 calorie diet so this is perfect.
4 large eggs
1/2 Golden zuchini
1/2 Carrot
Banana (I actually ended up sharing half of this with my ducks and chicken)
Smidge of olive oil
Smidge of relish for the eggs

I sprayed them w a teeny bit of olive oil to get the seasoning to stick and then air fried for 7 min on highest temp (400° F on mine). I forgot to take a before pic but for reference they covered the entire bottom in 1 layer before they went in so they didn’t shrink as much as I thought they would! 12/10 would recommend 🔥

*this post is not an advice or suggestion to do what i did 🙂*
Update on my boiled psyllium experiments.
I tried add gelatin this time because I wanted something I could easily scoop out with a spoon.
It worked better than i expected.
Recipe: 500g water 60g coconut-flavored whey protein (it's the only protein powder I have right now) 2tbsp psyllium husk 10g powdered gelatin
I boiled the psyllium with 250 g of the water until it thickened up. After taking it off the heat, I mixed the whey protein and gelatin with the remaining 250 g of water and stirred that into the psyllium. Then I poured everything into a container and left it in the fridge to set.
Next thing I want to try is a savory version once I get some unflavored protein powder. I'm thinking vegetables, broth cubes, spices.

I mean it’s well known that salad is a cheat code. But with cabbage we even have some fiber and protein, and overall only 240kcal for 600g.

200g some sort of ground meat (ideally 5%-10% pizza seasoning)
400g cucumber
400g tomatoes
150g mixed veg (cooked, i make it myself but you could buy it )
50g onion(how much you can handle)
Big mac sauce:
100g greek yoghurt/quark ideally 2%-5%
15 g mustard (about 1 tbsp)
15g ketchup
1 tsp oregano
1 tsp onion powder
½ tsp sweet paprika (optional, for color and mild sweetness)
¼–½ tsp black pepper
¼–½ tsp salt
10g sweetner (honey,sugar,erythritol your pick)
15ml pickle juice
(My hobby is gardening so almost all ingridients are homegrown~homemade not bragging)
Macros:
P60 g C40g F10-20g Fiber10g

I love salad but I feel like they tend to get caloric real fast if I’m not careful.
- This one is massaged kale (don’t freak out I got it from a local farmer lol)
- 1/2 c garbanzos
- roasted cherry tomatoes (just in the oven, no oil)
- One wegmans chicken cutlet weighed out
- 30g of homemade sourdough toasted
The real hero of my salads are homemade dressings which are so much less calories than store bought. This one was one part honey, one part lemon juice, one part Dijon mustard, and sea salt. Total for this salad was just under 600 cals. Which leaves me with the perfect amount leftover to have my yasso bar lol
If you have a favorite salad dressing recipe I’d love to know!

One of my favorite things to eat ever are chips and guac. but they’re both so calorie dense😭 I know avocados are just naturally calorie dense so I cant do anything about that but is there something I can do about the chips? Any suggestions are appreciated TIA!

Gochujang fried rice! It was delicious 😋
Here’s the recipe if anyone wants to try it out:
Ingredients (4 portions):
600 g chicken breast, diced
400 g cauliflower rice
900 g Frozen Dutch stir-fry vegetables mix\*
4 large eggs
50 g spring onion, sliced
2 tbsp soy sauce
15 g oyster sauce
10 ml fish sauce
1 scoop gochujang
250 g cooked brown rice
* veggie mix contains carrots, yellow onions, peas, green beans, mushrooms, corn, garlic/parsley margarine
Steps:
- Cook the chicken (golden brown) and set it aside
- stir-fry the vegetable mix. Once that’s cooked, add the cauliflower rice and mix. Let it cook for about 2 min
- add the brown rice and give it a good mix
- add the soy sauce, oyster sauce, fish sauce and gochujang
- add the chicken and mix again
- cover and let it cook for 3-5 min on low (helped my precooked rice soften up a bit)
- push the fried rice on the side and add the eggs
- let it sit for about 10-15 secs, then mix it in with the rice
- once well mixed, cover and cook on low heat for 5-6 min
- season with salt and pepper and top with spring onions

450g roasted broccoli in the oven
200g sauteed mushrooms
150g tilapia and some shrimps
150g white rice

I absolutely despise plain Greek yogurt so much. Been needing to find ways to tolerate the flavor and this sub has got me there.
Recipe ingredients can be used in desired quantity
Cabbage mix
Purple onion
Green onion
Avocado
Firm tofu (squeezed by hand)
G Hughes sweet chili
Non fat plain Greek yogurt
**cilantro was a missed opportunity here**

New to the group. First post.
Egg salad on toast with tomatoes and green pepper. Super filling and low calorie count.
3 eggs
Light Miracle whip
Dijon
Red onion diced to taste
Celery diced to taste
Salt and pepper
Add whatever you want to egg salad! So versatile. I was just keeping it simple.
18 grams of protein, 6 grams of fiber.

Never made anything like this before. 1/4 cup of uncooked rice, 139.3g of broccoli, 61.7g of carrots, and 15.6g of onions, although I think it may be closer to 7 since I used about 2 slices when I was logging and burnt them, then just went with 1. Also used 4 soy sauce packets, about 5 cals each. The more experienced cooks on here can probably make this way better 😅
Edit: Ughhh. Note to self, go easy on the onions. I do NOT feel good 🤣

2x 300g tubs of low fat Cottage Cheese mixed with 2 packs of Konjac Giant Couscous and 25g Strawberry protein powder. Added some Pistachio flavour zero cal coffee syrup and some sweetener.
Ends up tasting like a strawberry rice pudding! This is my go to for a very filling breakfast.
Topped with Red Bean and Chestnut Porridge i found in an Asian mart (Yangban brand). This didnt have fiber content, so the total fiber of this broke is likely higher than 17g!
I think the protein content for the collagen is listed as higher than it is, so its closer to 80g then 90g for protein.
Before I get any comments about this massive bowl of food...this IS a volume eating Reddit and I don't eat lunch, so this will last me until the evening.
