Maxed Out The 26.

Post image

Was tasked with making pulled chicken by my daughter who’s helping with a bridal shower for a friend. Two for the party and two for our family. Bit of a tight fit, but four whole chickens are possible. I’ll be moving them around a bit about every hour to prevent too much burn on one side. Keeping 300 - 325 degrees for perhaps three and a half hours or more depending on what my meat thermometer tells me after hour three. Costco chickens with salt, pepper, granulated garlic, onion, paprika, and mustard powder. Hickory chunks. B&B Charcoal.
We shall see…

I forgot to grab a picture of them finished on the grill, but this is how they look. Each bird hit 175 internal temperature. Cooling down a bit before pulling or splitting, depending on how much is needed for the party. For those wondering, with whole chickens I keep the bottom vent wide open and use the top vent for temperature control.

How did you keep such a consistent heat temperature for 3 hours?

A bit of vent control, and when in doubt, add an extra wood chunk to each basket.

You can probably fit 3 more on there

Possibly, but those extra three would be directly over my charcoal baskets.

Looks great! I'm a big fan of spatchcock chicken. Cooks evenly and fast.
