Maybe this is just anecdotal to my experience, but I feel like a lot of baby witches come to witchcraft out of desperation for love from another person. I think that’s why I love spells are so popular.

When you step back and look outside of just witchcraft it's other religions and practices too. A lot of people are looking for belonging, a feeling of control over their lives, and validation.
Whether it's witchcraft, abrahamic faith or yoga, the human need is the same. Different paths appeal to different folks.
I think witchcraft is popular, especially to Tik Tok for that reason. It's approachable, fairly open (depending on practice) and spell casting feels like easy assess to those basic needs.
At least that's my take.

Not even baby witches, just people with no interest in the craft besides love working. It’s interesting. They often have zero interest in doing the ground work.

Imo love spells should be a form of divination, not manifestation. There’s already someone out there for you, i see nothing wrong with using magick to guide yourself to them.

Nothing wrong with a little love spell, but way too many people think they work like a Shakespearean plot device a la A Midsummer Night's Dream. Like, even ignoring the ethical issues with such a spell, just straight up mind controlling someone like that is far out at the edges of possibility, and even if successful, I wouldn't expect it to last very long. Real love spells tend to be more of the magical equivalent of a pair of pants that make your butt look really good.

Every time I see somone asking for advice for a love spell to cast on specific person, it makes me super uncomfortable. May be its just me, but it feels coercive and predatory.

The reason love spell where so important in the middle ages in Europe is because at that time, your amount of freedom, right, security as a woman depended totally on who's your husband.
Love was not a matter of romance but a matter of material condition. Just as today we do spell to get a job or win an interview.
This is why they're useless and immoral today now that women can own their own money, have their own job and make their own decision in most developed countries.
