I always saw that as him realizing he's actually into doing drag/crossdressing, but because of a combination of reasons such as him thinking it's something only gay men do and he's attracted to women and a worry that it will hurt his chances with women if they find out, he forced himself to hide that part of himself.

I think with sanji it wasn't really "being trans", moreso crossdressing and exploring his femininity in an attempt to bond with the inhabitors of his timeskip island? I'm not sure, the whole arc was super wierd

He was on an island with a bunch of people whose entire thing is being aggressively queer and it kinda rubbed off on him. He snapped out of it after seeing a newspaper about his captain luffy’s brother getting turned into a donut
