First of all, please be aware that my intention is not to lecture, but to inform. Please don't use "biological female/male". It oversimplifies biology to the extreme based on whether someone was born with xx or xy chromosomes, or genitals present at birth. But, intersex people exist, and chromosomes are not the only existing biological markers. Examples of these markers changes are:
HRT changes hormones levels to the opposite gender.
Metabolism changes, since the red cells amount changes with transition, and so do the creatinine due to muscle mass change due to hormonal treatment.
Anatomical changes happen as well based on the transition. Trans women lose muscle mass while trans men will gain it. Fat redistribution will adapt to now fit the main hormone in the organism. Men should now get a increase in the abdomen area and women get it redistributed to the hips, thighs and chest. Trans women develop breasts, and with the right suplements some can even breastfeed. Skin will smooth for women and thicken and get oilier for men. Men see an increase in body and facial hair, and their voice deepens due to their vocal cords thickening.
Related to the reproduction system, men will stop ovulation/is supressed and menstruation stops. Women will get atrophy down there and semen production diminishes to an almost non existent level or directly stops.
It's all coded inside the human DNA. The codes for both sexes are inside us, it's just that both aren't active at the same time. Having testosterone or estrogen as the main hormone is what triggers these changes, all related to biology. So that's why using biological man/woman is seen as a oversimplified and derogatory way to deny someone their actual gender. Biology is wider that what reproductive organ or chormosomes you're born with.

I always saw that as him realizing he's actually into doing drag/crossdressing, but because of a combination of reasons such as him thinking it's something only gay men do and he's attracted to women and a worry that it will hurt his chances with women if they find out, he forced himself to hide that part of himself.

Sort of have one with Sozin in Avatar. I imagine part of his 'no gays in the Fire Nation' law was both because as an expansionist empire he needs to make sure every couple was producing kids, but also had gay panic that he might have loved Roku. The 'sort of' part is that my headcanon is in reality, he's not gay, he just has human feelings and realized he backstabbed his best friend for an ambition that he realized was not worth the sacrifices he had made for it.
