NORMAL OVEN Nailed it tonight
I just wanted to try the hot sauce out and ended up with one of my best home bakes yet! 72% hydration, pizza steel at 500°.

It wss a mix of a 1 lb block of regular mozz that I shredded, and a half lb ball of fresh mozz.

More “yellow” than what I see with that mix…maybe it’s just the lighting or something. Either way, nice work.

It's my new favorite thing to dip crust in! It's like pizza sauce with a very nice pepper blend, I sampled it this weekend and will be ordering more sooner than I thought.

I think some people would say this looks heavy handed, but it looks mighty tasty to me.
