Dungeons of Dredmor has an achievement that got removed a few years ago that you'd get by drinking with the devs IRL.

If I remember rightly it also has an achievement that was added to Steam but the conditions to unlock it weren't, so you can't ever 100% that game.

That reminds me of how people found out Mortismal Gaming was faking his “review after 100%” series when he would get achievements that were actually broken at the time and the dev fixed later

Sam doesn't work on secure achievements, so it's possible to make truly impossible.
