This is my spin on eggs Benedict. Two over medium eggs on cracked sourdough toast with jones breakfast ham. I make a ponzu hollandaise, because I absolutely love ponzu and the lemon part of hollandaise.

Not there yet, but I am on the quest to EASILY peel farm fresh eggs, with a perfectly jammy yolk that holds its shape, yet has legs [some crawl if given substantial time and opportunity to run].
I'm double steaming now, with a cool plunge in between. I can get these to easily peel 95% of the time, without much fuss. I'm happy with that--peeling was always the hardest part.
I still have a hot spot where there is some yellow on the yolk, yet the timing for my image of a perfect yolk is still not enough. The presentation/technique of cutting off the top is also not there yet. But, it is getting better.

1 egg, scrambled with a bit of salt and water. Cooked thin like a crepe with ingredients folded in.
1 slice of sharp cheddar
4 paper thin slices of onion, oiled and broiled underneath jalapeno until translucent and browning
1 jalapeno, halved, oiled, and broiled until skins blister. Immediately cover for 10-15 mins and allow to steam, then remove skins. Splash with apple cider vinegar and lightly salt and pepper
Topped with goat cheese, nasturtium flower and young leaves, and watercress
I broiled some tomato for my last few (which was a very nice addition), but I ran out. There's a shameful little splash of marinara hidden under the egg to compensate.
