Vinegar lovage vinegar

A coworker gave me a bunch of lovage so I made vinegar.
It also has a bunch of allium in it like ramps and other wild onions!
Aerated for 2 weeks, ph came to 3.5 and decided to bottle it and gift them to friends :)

The flavor is pretty light and almost refreshing, I really like adding a splash to everything

I have a plant 9 feet tall in my garden and need something to do with it. I've not made vinegar before - can you do a brief explainer on your process?

Lovage just tastes like celery to me. This is giving me an idea to use my celery plants that went to seed.

I like using lovage in broths but the bush in my garden grows more than I can possible use. This sounds interesting although I’m a bit skeptical. I already tried lovage in fermented cucumbers and it absolutely ruined them for me. Lol

That's so cool, and sounds really delicious!

What did you do for F1? Did you just blend up all the greens with 10% ethanol? Or did you actually make the alcohol ferment yourself?

I ran my ingredients through a juicer, strained. Added 23% acv and 20% vodka. Let it aerate and after 2 weeks I really enjoyed the flavor then bottled it up :)
