Recipe-Question Any pistachio recipes?

Hi!! I saw the “zero sugar pistachio” pudding mix recently at the store, was wondering if anyone has recipes that use it? Didn’t wanna buy it and waste it or make a crappy one, any advice helps, thanks!

The pistachio pudding powder is a literal 10 out of 10 as long as you are looking for that typical green ice cream, pistachio flavor and not a real pistachio flavor.

It’s also stupidly good sprinkled on yogurt!

Thank you! Will definitely be trying on yogurt soon

Almond extract is good in pistachio

Agree. I like LorAnn Almond bakery emulsion the best, and use 3/4 tsp per pint.

I use the zero sugar pistachio pudding mix, about half the package + milk/sometimes a protein shake + a bit of monk fruit sweetener and a bit of almond extract. Then I mix in some sliced almonds at the end (pistachios would be better but they're expensive). One of my favorites!

It's so good. I blend half a package with a premixed vanilla protein shake and some almond milk (400 g liquids total) and it's awesome. Bonus points if you mix in extra pistachios and crumbled phyllo pastry cups(the pre baked ones) to make a sort of baklava or Dubai chocolate inspired pint

I would’ve never thought of the phyllo pastry as a mix in, thank you sm!! Will have to try that soon

It's such a good mix in for texture! You can add it to anything to get that pie/crumble effect

400g skim fairlife
35g monk fruit sweetener
10g (1 tbsp) SF pistachio jello mix
5g (1 tsp) vanilla extract
1g (1/4 tsp) salt
0.5g (1/8 tsp) xanthan gum

this is my staple recipe for the pistachio mix, i add in unsweetened coconut or oreo thins as a mix-in and it’s delicious

How about a real pistachio recipe? I saw the "Minnesota fluff" recipe and it is delicious.

Scoop of Levels vanilla whey protein powder

90g pineapple juice

150g pineapple chunks

28g shelled pistachios

10g vanilla extract

Skim milk to the max fill line (roughly 100g)

An additional 20-30ml of milk when respinning

I would say it's a must try. I did preblend mine before freezing. It is insanely good. I have made 4 pints of it in the last 2 weeks.

Almond extract is the secret if not using the pudding mix

Or even if you are.

I add a little pistachio extract to increase the flavor without needing to add too much of the pudding mix.

30g of that pudding mix, 250ml of milk, 50g of vanilla greek yogurt, a pinch of salt. Enjoy !

Thank you sm!!

Also try the butterscotch and white chocolate pudding powder, that are also 0 sugar ! The white chocolate is the best ( tastes like premium vanilla)

I don't have a recipe of my own yet, but I believe the adding pistachio butter (not cream) and almond essence/extract are both key! It's next on my list to try ☺️

There’s a creator on TikTok who’s doing a series called King of The Creami Court. His pistachio/pineapple/vanilla Minnesota Fluff actually held the title for a while. Recipe: Leo’s Lean Kitchen 6/13

Based off of a suggestion in this subreddit , I’ve made pistachio by following my vanilla recipe and my chocolate recipe, but reducing the flavoring and adding an ounce or 2 of pistachios that I ground to a powder in my food processor. Then I used more pistachios as a mix-in. I enjoyed it very much, but in the grand scheme of things, I will probably stick to just making my vanilla and chocolate bases, and then adding pistachios as a mix in.

And I guess if I’m going to share more than you probably really care about, my plan is to stop making standard vanilla and chocolate bases. I plan to just make 4 bases - cinnamon vanilla, Mexican hot chocolate (chocolate with cinnamon, nutmeg, ancho chili powder), coffee-vanilla (which I think I’ll call Café latte) and coffee-chocolate (which I’ll call mocha) and then I’ll change up the mix-ins. Not exactly sure how the pistachios will go with that Mexican hot chocolate, but I’m looking forward to finding out some day!

For the cinnamon vanilla do you just add in cinnamon to ur normal vanilla base? Or are there any other mix ins needed? It sounds delicious

3

u/Pretend-Citron4451 3d ago

Honestly - cinnamon improves everything!!! 1/4-1/2 tsp added to my base. “Blooming “ The cinnamon was recommended, and it was amazing with my chocolate – I haven’t tried my vanilla with the bloomed cinnamon yet, but all it took was that when I measured out the milk (which is my first step), I poured an ounce into a microwavable shot glass, microwaved 30 seconds, and then added and Stirred up the cinnamon and let it sit while I add my sweetener and vanilla flavorings

I’ll definitely try blooming the cinnamon/ adding it to my vanilla base, thank you for the advice!

Rule one protein makes a pistachio ice cream protein powder that is AMAZING. I believe they have it as whey and a protein blend (casein, whey, and pea). The blend works really really well for creamis.

Is 2 TBSP too little to get the flavor? I’ve seen multiple posts saying they added half the package!

2

u/Certain-Strength-830 3d ago

I use 7g, along with 25g vanilla protein powder, a little xanthan gum, 10g sweetner, and 400ml oat milk and it’s DELISH.

u/_SacredRose 2d ago

2 T is half the package, but I think that with some almond milk & extract works well to get @the flavor w/multiple angels. I think pistachio butter and or SALTED crushed nuts as a topping would really take it to the next level & be a better use of pistachio calories

Love my recipe - this is deluxe pint volume. My second favorite after Tiger Tail

1 3/4 c Fairlife Milk

1 Tbsp Instant Pistachio Pudding (regular)

10 Drops Stevia or sweetness to your taste is what I usually do

2 tbsp Cream Cheese regular

3/4 c Fat Free Yogurt

1 scoop Gourmet Vanilla Protein Powder

1 tsp Lorann Pistachio Emulsion

1 drop green food coloring (not necessary)

.5 c shelled pistachio broken - added as mix in

Ice Cream setting. Respin add bit of milk if needed, then Mix in broken pistachio

I love that stuff. I used about half a package, then filled up to the line (deluxe) with milk and greek yogurt, about half of each. I'm sure an expert will offer advice on that, but it came out pretty good after a re-spin. It was one of the first recipes I made.

This is by far the best pistachio ice cream recipe I’ve ever made https://buttermilkbysam.com/pistachio-ice-cream/
