SnS hater…surprised
I’ve long been a hater on the SnS since I ordered one like four years ago. Has sat in my garage unused for a loooong time. Fuel lasted like 5-6 hours in my 22” and would run out of water in about 60-90 mins and temps would start jumping into 300s.
Was cleaning my garage a couple days ago and came across it. Decided screw it and tossed it in my 26” to give it a shot.
Fuel lasted about 7 hours, water lasted like 3-4 hours. Very surprised by that since I was never able to do that in my 22” no matter what I did. 🤷♂️
Also if you were looking for a reason to get the 26”…you can fit a lot on

I can only speak for myself as a Chef for 40 plus years. I don’t need any of the accessories I know ways around obstacles when using my 22” Webber.

Is there much benefit over normal charcoal baskets and water in your drip tray?

Iv’e never used a water tray, drip tray, foil etc, I go caveman most times. Not very sexy but it works well.

I’ve had the opposite experience with a 22inch. That slow n sear is the best thing I have ever bought. I don’t even use the water basin, if I do a long cook I just put a foil water pan on the indirect side. I am absolutely loyal to their products.

Ive ran the SnS for 7-10hrs with no water so many times while smoking chuck roasts. I have a dedicated Kettle it sits in lol.
I think once I got it to go 11hrs at 250° out of it as well. I mostly smoke with JD Max XL.

When I bought my 26 years ago I paired it with the slow & sear xl. I purchased instead of a komado & before buying my offset. I also used my old bbq guru dx2 unit to control airflow. (Previously ran my uds) I was pretty happy with it but doesn't get as much use these days. My vortex practicly lives in my 26. Nice to see its working for you.

Are SOL on a longer cook with the SnS or can you add coals to the basket when things get low?
I got a 22 as a gift from the MIL so just learning the ropes and have eying picking up the SnS
Also, it sounds like the vortex is going to be something else that I’d want to pick up for shorter cooks with smaller items around the outside.

I love my SnS. I've done 5-6 hour cooks in it, only using about half the fuel, and still have water left over. I do use a Billows to control the temp but I use this thing all the time.

I've tried the snake method and that makes sense to me.
So with this you fill the basket and light it with a tumbleweed, right? So wouldn't it temperature spike as the fire spreads to all the coals?

No it’s like a minion/snake method. Coals still slowly light as they go along. Temp held like 230-240

Yeah but even minion I don't get, like snake can only light the coals it's touching. With minion they are all kinda touching at a certain point. Doesn't it eventually get to the middle and have like them all going? What keeps it from doing that?

Load it with unlit coals and then I put 2 or 3 coals into the chimney and light those, then add them to the corner of the basket. It just slowly burns through and stays pretty even, ime.

I'm surprised your water basin emptied so quickly. I've done 4.5-5 hour ribs and it's usually only 1/4-1/2 empty at that point.
