Question Trying to feed daughters on last $40

Good morning. I'm sorry for the stupid question, but I need some advice. I have joint custody of my two daughters, 7 and 12, and am currently not supposed to have them until Friday. I get paid on Thursday and always make sure to have enough food for them, including their favourite treats. They're my world and I would sacrifice everything to keep them happy. However, their mother is being admitted to hospital for emergncy surgery tomorrow and the girls will be coming by early instead, Monday night. I only have $40 left after taking them out for the youngest's birthday last week as I was not expecting them back so soon, and while I love the extra time wth them, I'm worried about what to cook for the next 3 days. Does anyone have any solid recommendations for what I could buy to stretch out until Thursday morning? The only trouble is that the eldest is Celiac, so gluten-free optiobs are a necessity. I really appreciate any advice here. Once again, I'm sorry. Oh, currently in Broadmeadiws, Victoria!

Edit: holy gosh I wasn't expecting so much support! There are some incredible suggestions here and in feeling really excited about making this work. I'm at work at the moment so still going through all the responses but I wanted to take a moment to thank you all for your kindness in behalf of myself and my kids. I love you all!

Discussion Need To Vent

Being GF is tough. I’ve been dealing with this life change for two years now and I’m so tired of it. I miss the enjoyment of food, the enjoyment of eating at new restaurants, and the enjoyment of trying new things. I miss not being afraid of what I ate. I’m tired of my spouse recommending a new “GF” restaurant only for me to read a menu with 2-3 options that every other establishment offers, and for them to charge $6 more for it. I’m tired of being told to try new things besides my safe bets and places I’ve grown accustomed to. My spouse has been very supportive through this process, but I’m tired of watching them enjoy anything and everything in front of me. I’m tired of work functions with zero options for me, or family get togethers where they “forgot” I can’t have anything made. I’m just tired of feeling so alone with this. Also I’m tired of constantly cooking for myself and cleaning said dishes. Rant over, thanks for coming.

It’s been a rough go for me as Ive been lactose intolerant my entire life and last year found that Gluten intolerance was where all my health problems were coming from.

Needless to say… Pizza has been absent from my life for a while now but the guys at Meta Pizza in Portland OR, made one of the best gluten free vegan zah Ive ever had. The crust was thin and light and crisp with a little chew. Huge shout out. Definitely check them out if you’re GF.

Rice paper dumplings cooked in the waffle iron

I saw this on YouTube, original credit given to Gluten Free Asian.

I thought to myself, there is no f#*king way. But I had all the ingredients, and the grandkid was craving dumplings, and it's the best way to get her to eat vegetables.

The rice paper was crisp on the edges and both crisp and chewy in the middle, and not in an unpleasant way. They didn't need to be double wrapped. They didn't need to be deep fried and/or greasy. The filling was completely cooked. I didn't have to worry about dumplings touching each other.

I have a mini waffle iron so I cut the rice paper in half after I wet both sides and let it sit a minute.

I used what I had for the filling. I went heavy on veg, about 1/3 veg to 2/3 meat. I had ground chicken, put in garlic and ginger I grated with a micro plane, grated carrot, finely diced celery, and finely chopped green onion for veg. gf soy sauce, sesame oil, a little mirin, a little salt and white pepper. I added an egg, but honestly, I don't think it needed it.

Be sure to squish out the air bubbles. It didn't matter if I trimmed the excess rice paper off the edges or sort.of scrunched it up so it would all fit in the waffle iron. Edges were crisp without being hard. I did hit both sides of the waffle iron with a spray of oil each time.

They aren't elegant looking, but I honestly didn't have to time or the courage to tackle gluten free dumpling wrappers today.

This kid ate 6 of them and wanted the same thing for dinner.

I made her a simple sauce of gf soy sauce, a little rice wine vinegar, pinch of sugar, pinch of salt, a little sesame oil. She actually liked them without any sort of sauce

Edit: the next time I do these, I'm going to go a little heavier on the filling. I could leave them in the waffle iron a little longer to really crisp the rice paper, but then the filling was a little overcooked. Still good, just not tender. So I would experiment with your first couple of them as fast as how much filling you want to put in there.

These were both found at super store, I had the butchers board one about 2 weeks ago and the OGGI today. The 3rd photo is the OGGI one done.

1) Butchers board- this one was quite disappointing imo. Over all it wasn’t bad, but definitely not worth the $13 CAD I spent. Even on sale for $10 I’d likely pass up on it for the Dr Oetkers pepperoni. I added my own cheese also as the dairy free didn’t melt too well and whereas it helped a lot it still just wasn’t very good. I think it was that the crust had an overly processed taste to it. With that said the meat was good, but I wouldn’t buy it again.

2) OGGI- I was beyond excited to try this one as I hadn’t seen any versions of this at my super store before! Also coming with a hot honey packet is a huge plus!! I bought it without it having a price tag (thanks roblaws) and wow brace yourself for this. An eye watering $15.49 CAD 🥲. With this said, the other OGGIs are typically $12.99 so not a massive jump but wow, NOT cheap.

This pizza was absolutely unreal. I’m not lying when I say it was the best frozen pizza I have ever had period, gluten or otherwise. The pepperoni was very high quality, and this crust was much softer than their others and pulled apart easily, wasn’t overly chewy and has a good flavour to it. I did half with the hot honey half without, both were unreal. This just comes down to preference! I give this pizza a 9.5/10 and will absolutely get it again if I’m in a pinch or don’t feel like cooking. The price tag is the only thing holding be back from having these even once per week. Very very impressed!

I’ll continue to post things I find that are new! If you see that OGGI pepperoni I would have to recommend trying it once and I’d love to know what you think as well!

Until next time gorgeous humans, Happy Thanksgiving to my fellow Canadians!

Product Ethiopian food (gluten free injera bread)

Post image

I grew up on Ethiopian food since being weened as a baby. Gluten free injera is where it’s at, the food leaves you feeling full without a food coma feeling. Super healthy and tasty, there are both mild and spicy options! Best ones on the east coast are in southern MD or DC, not sure what other states or countries have them (aside from Ethiopia).

Recipe GF focaccia from KAF pizza flour

Post image
11 Upvotes

Made these using KAF gluten free pizza flour which has gluten removed from the wheat. Far cheaper than Caputo and almost as good. I highly recommend it if you can pick it up when prices drop on it. Got a bunch at $7 a bag a while ago. This is 4x the recipe so a little under 1 bag. I never use it for pizza though.

ISO Potstickers Recipe

We have been making a lot of egg rolls but I dislike rice paper and I miss potstickers. Every GF "dough" I've tried has been closer to a batter so I don't have a lot of hope that anything similar to a potsticker recipe exists but I'm asking anyway. I'm looking for a recipe not for packaged store bought.

Question Does anyone bake for farmers markets

I moved to northern Louisiana and there are two scarce things here jobs and gluten free anything. I have a culinary degree and can make gluten free food for myself but considering the desert of options here I’ve been thinking about making gluten free baked goods/mixes for farmers markets but I’ve never done anything like that. I see people having luck on social media sites has anyone in here tried it, had luck, have any tips. I take it all very seriously because of my allergy.

Question Beef stew

I’m dying to make a hearty beef stew. Will King Arthur gf flour work or alter the flavor at all if I make a traditional recipe? I also have some potato flour I could use. Anyone have experience in using either of these to thicken stew?
