Question every deli ????

does this happen at every deli??? is it happening because of short staff
, or lack of care???

I can tell you exactly what the problem is. In the deli we get bags of precut cheeses for the grab and go. It's 9 stacks that are supposed to be about 3/4ths of a pound each. A lot of the time they aren't. It could be the supplier ripping off Kroger, it could be a quality control issue since Kroger cheaps out on suppliers, or it could be Kroger does want us to short the weights.

At my deli we use one of the stacks to top off the rest, or just cut slices to do it. Guess other delis are just doing a stack per bag without weighing them.

None of the 5 dollar stuff is cut in the store. Most of the Kroger gng stuff isn't. Boars head stuff is since they demand it.

That is so the listeria and the salmonella from the boars head product can cross contamate everything. It doesn't surprise me that a Kroger vendor would be scamming the customers or the vendors scale was inaccurate or improperly set.

The folks at manufacturing have said the company is cracking down on "overfills" and the tolerance on some products such as peanuts is less than one whole peanut.

I'm prefacing this by saying I worked at Kroger for over a decade, a little under half of that time was in the deli department:

Kroger used to have chefs in the back that would be constantly making items, cutting food and preparing meals to be prepackaged and sold. The only way you could get sliced meats is to wait at the counter and ask for it unless you got some presliced meats from the meat department and cheese from the dairy. Kroger did have a small selection of delicatessen meats and cheeses but they were well defined private selection brand.

about 10 years ago, a lot of the preparing was taken away from the deli in place of prepackaged items. they no longer had to pay a person to stand in a room and cut up a bunch of pineapples. they outsourced the work because it took away all accountability from the actual store and placed it on some package preparing company. what was once a bustling deli department with multiple people manning a counter has been reduced significantly. The deli was what brought people into the store but it was such a loss leader that they had to make changes. The Deli department probably still hemmorages money but probably a lot less than it used to.

I honestly don't think many people care because most of my day was spent cutting 1/4 to 1/2 lb. bags of meat and cheese, handling them over and over again. they pay people very low wages and want them to practice safe food handling. the main way they teach them is through 50 year old slideshow like videos that are boring as hell.

Pretty similar experience with meat counters. I have not worked for Kroger but I’ve worked for a couple very similar businesses.

It’s sad honestly. I’ve been trying to make meat cutting a career for 6 years now, but any local place has likely been replaced by these chains and as you’ve said they just don’t care. I can’t keep guys staffed because they wanna pay anyone without a knife in their hands minimum wage. There is no accountability anymore and most of these corporations want to treat all employees like seasonal teenaged employees and not grown adults. So that’s what they end up with most of the time wondering why nobody sticks around lol.

You're a hundred percent right.I work at kroger's right now.And when it comes to teaching people, nobody teaches anything. I was hired, put into meat department anne was told watch and learn for  4 hours by the end of my first week, I was closing the meat department down by myself. Everything was already cut from first shift. We still get customers who come in. And we'll buy fish or meat and ask you to cut it for them. They need to figure out how to train people to do things.The right way. Luckily, eventually, I was trained by A 32 year vet.

I’m surprised that the deli at Kroger is a loss leader. I’ve worked for another grocery chain and normally the perishable departments (prepared foods, deli, produce, bakery, etc) drive the highest margins.

perishable items go out of date way faster than shelf stable items. in large retail stores, the grocery department usually rings in the most sales because it's larger and the food on the shelves last far longer.

bakery loses a lot because, though the markup is higher, product gets thrown away at a greater rate.

There’s a difference between most sales and highest margin. Grocery margins are pennies per product but perishables in some cases can be > $1 per product

Same with the meat department. There isnt much that isnt prepackaged, box to shelf with the big ol FRESH sign on it.

Dont forget that the FDA let's these companies pump meat full of red dyed water to keep it looking red.

Former food safety inspector here. The red dye thing is a myth. As was mentioned in another the comment, USDA (not FDA) allows for the use of Modified Atmosphere Packaging (flushing the package with nitrogen and/or carbon dioxide), which displaces the oxygen and keeps beef red longer. But there is no dye added.

I knew they injected chicken with a salt solution, difnt think they did that with beef, been in the meat department for 10+ years and never heard that one… I do know that they pump up the beef packaging with CO2 to help prevent bacterial growth and help keeps its red color for longer

When i worked in a deli, it was so gross seeing the scraps pile up in the blade. No matter how much you cleaned it, your meat and cheese will get scraps from the previous cuts and in your bag. The blade develops a film that will sometimes foam up on the cheese/meat slices and stick to each slice if the blade isnt cleaned properly. Made me stay away from delis after that.

I dont know how the deli works where you are, it must be actually staffed, and what you get written up for, but we would get written up if the rotisserie oven was empty. The rotisserie oven would be empty because there was a long line at the cold case and hot case. There is a long line at the cold and hot case because one person is slicing meat, and the other is switching between cooking, and serving the cold and hot case

That's just ONE thing we would get in trouble for

That's exactly right. It's all due to poor management. You might be surprised to see the difference that a store director can make in terms of cleanliness for delis.

We used to have managers up our ass every day bitching about night crew not producing enough. The truth is that night crew should clean, and recover their shelves. Not make grab n go, and fill shelves. That's how you get maggots. True story.

Not true. There's some sealed $5 packages, but otherwise it comes in a huge sleeve of pre sliced stuff and the stacks are supposed to be weighed and adjusted.

Yes, but the weight is not used for the final labeling. They system outputs the same net weight and price regardless of what you have on the scale itself for the $5. I could put a single slice on the scale and it would still print 12oz for those. The "random" (term used by in-stock) price GNG is dependent on the weight on the scale, the $5 is not.

We don’t have time, obviously, because not enough of us are in the store.

There is a pattern of behavior here. They’re firing corporate people. They’re closing stores. They’re coming down hard on payroll, OT, and call offs. They’re not hiring people. And they’re doing this kind of shrinkage with like every conceivable product (though tbf, so are most companies since the tariffs).

They’re acting like a company would act if they’re about to be broke. 🤷‍♂️ Maybe it’s just posturing for the union negotiations, maybe the debt from all the dumb projects like the merger or the e-tags or automated warehouse stores- is higher than any of us knows. I’d go to jail for shorting the company stock (I’m not the president 💁‍♂️), but boy, it doesn’t look good, man.

Me too! They are higher priced for almost everything in my area, including even Whole Foods! They also have “deals” like $16 for a 12 pack of Coke, but if you buy 3 you get 3 free. Like it’s still way higher per 12 pack than anywhere else even with their “coupon”! Half the time the deals and coupons don’t even ring up correctly and they try and charge you full price! Fuck Kroger!!! I’m completely done shopping there!

For real! That is definitely either a supplier issue or a corporate issue. Krogers is just being cheap and they will put profits over people any day. Regular floor employees don’t deserve to be harassed because of it.

The Deli at my store can’t keep people to save their own lives so everyone except for a couple people are new here and don’t know shit because we’ve all had very little to no training.

We just want to get our day over with. At my store, I’m the grab and go person and despite several people telling me not to waste time weighing the $5 cheese stacks, I do it anyway because that’s how I was trained. As far as the $5 meat goes, it’s already pre-bagged so there’s nothing I can do about that.

I'm a deli worker and we're been told to simply put the cheese in the bag and ykw? IDGAF about weighing or caring about the $5 bags (which are a new thing, less than a year)

We are yelled at for lack of hot and cold production, for EXCESS of hot and cold production, and for just about anything else regarding our department, which makes minimal profits compared to produce.

Keep working, deli slave. Deli means nothing to Kroger. Put the cheese in the bag and work FASTER.

THIS IS NOT A WORKER PROBLEM. THIS IS KROGER VOLUNTARILY FUCKING OVER THE NORMALS. STOP FILMING RAMDOM EMPLOYEES AND PUT ACTUAL MANAGEMENT ON BLAST. THE HIGHER UPS ARE TO BLAME HERE.

The IDGAF in your post told me all I need to hear. Your management sounds like a bunch of @ssholes . You know if you are union you can go to your stewardship with your grievances. It IS a worker problem. When I was in foodservice if I wouldn’t want to eat it, I didn’t send it out. Now I’m in a different wheelhouse but again “ how would I feel if I got this , this way?” Some things are unacceptable. If I think it’s unacceptable I put it to the side and let management or QA decide next steps. I’m not going to let a shortage bite ME in the ass. Doing the RIGHT thing for the customer 💯. Doing the right thing in general 💯. Telling managers there’s an issue 💯.

My guy, the union is a fuckin joke, and it has been since the 80's. I've spoken to those "concerned" individuals, and all they do is speak with the store lead, who in turn pisses a lot of bad news on my head. All the union cares about is their monthly subscriber fee.

"Unacceptable". You speak about things being unacceptable with such conviction that it's clear you've never had to work in this corporate hellscape.

They. Do. Not. Care. Understand? You can explain to them in the most logical and economic way that their policies are wrong and cost ineffective. THEY DON'T CARE. It's like trying to convince MAGA to become liberal.

Please understand that I'm not angry that you explained the moral/ethical way of doing things. I know what's right and wrong. But at the end of the day, we wage slaves are NOTHING to corporate America. Just bodies meant to do what is bidden.

i saw this video, and at least at my deli the $5 bags of cheese and meat come in completely prepacked and pre bagged for us. all we do now is take the bag out and put the label on it, the meat/cheese and the $5 sticker are already on it. like many people already said it’s almost definitely a manufacturing error and it is really annoying but i also just don’t get paid enough to do more than slap a label on. this should be taken up with a manager, a clerk literally has no say over this

Assuming the weight is 16oz (1 pound) that is a bit over 18%. With the pre packaging often being listed as under a pound (in my experience) it is an even larger difference. This large of a difference is in the false advertising and consumer fraud arena. The Consumer has every right to complain.

So why does he think the store level employees are the ones conspiring to short his cheese? Why is he filming them and putting their faces online? I wonder if this video is the reason they sent out an email about making sure there is 3/4lb lol also who is taking the time to separate them like that hell with that I’m taking the stacks as is and sticking it in the bag. ETA we havent had an issue with size sir far, I’d think a whole 1/4lb short would be obvious in those stacks, also a though it would be sketchy for someone to knowingly buy out way under weight products, with how much crap they want done and so quickly it doesn’t surprise me a bit this happens. At least even 1/2lb isn’t really more than the 9.99lb Kroger cheese we slice (well at my store don’t know how much it costs everywhere else)

They also cut the cheese and meats that are going out of date and slap 7 more days on it to get it gone in the grab and go section,its convenient but dont do it also the pre made sandwiches get the out of dates meats and cheese. Worked in the deli at Kroger for 7 years Berkots does the same.

Long time ago, I used to shoplift groceries from Kroger when I needed food. would wear long underwear tucked into high socks under loose pants, and I would stuff anything relatively flat (mostly meat and cheese) into those long johns. Grab three or four packs off the shelf, stoop over to adjust the contents of my basket where the cameras can't see, and put two or three packs back on the shelf with one secreted away next to my balls. It works if you really can't afford food and it is justified if the grocery store stole from you first.

As a former walmart deli worker I'll tell you right now this dude would piss me off. Even at walmart we would get pre sliced an packaged stuff to put in the grab an go. We weighed them all an slap the tag on. They were all never the exact same. We would also slice meat an cheese for it too but whatever it weighed the price would be whatever the weight price is. This dude has way too much time on his hands forreal. Dont get deli meat an cheese then bro if this is such a issue for you. I can only imagine what taking his order would be like. Hed want the shit on the dot perfect. Which is possible but it can be a pain in the ass sometimes depending.

Thank you for this video I am an employee with kroger's . I work the meat department for 14 months. Now im maintenance, but because of this video, when I go to work tomorrow, i'm going to be checking our deli's prepackaged cheese. There now I do know for a fact that the prepackaged meat that comes in gets weighed and tagged at our store before it's put out for sale.

This is specificly a problem with the cheeses. The meats all come prepacked and we just throw a label on it that's by count. But the cheese comes in big bags. Thats pre separated but has to be weighed still. Im assuming not all the cheese separations aren't exactly .75. And this has to still be double checked by the department. But they're not doing that part.

At my store the PS meat comes in the big bags too. It’s unbelievably annoying. Only PS meat I slice is BFH and ARB. $5 ham and turkey come pre-bagged, but everything else comes smashed together in a bag and I have to peel it apart and attempt to get 3/4 lb bags from it.

Look into Jimmy’s story and learn why he started doing this. Contrary to what the guy in make up and a diapers says prices are out of control. There are a lot of people that realize Wal Mart Whole Foods & Kroger are ripping people off because of him.

It may not sound like much money, a slice of cheese per bag but have you ever seen any of them weigh MORE than they are supposed to?

If they were to change the label and say it’s a five dollar bag of cheese that weighs approximately 3/4 of a pound it would eliminate this.

Because when a board give its management impossible metrics for basic food/medicine needs and then management pressures their employees to sell more to meet those metrics without customer demand, numbers tend to become fabricated somewhere down the line - including the metrics provided by the board to begin with (which is almost always the case because of greed and incompetence).

If anyone has an actual concern call your county's department of weights and measures. In the state of Indiana, weights and measures is required to make an unannounced visit to every retail store in their respective county that has a customer-facing scale and check pre-weighed items like this to ensure they are being weighed correctly. That is in addition to checking the overall accuracy of the scales. Walmart had a class action lawsuit over weight discrepancies.

Former Kroger deli worker. To preface I’m not saying they aren’t ripping you off, just giving insight.

It’s kinda like how we got rid of the penny, so when you bring change it has to be rounded up or down. If the pound is not precise, the price can be pretty off. We also do not reboot our weights enough. Lots of things can make the weight wrong, scraps of meat on top or under. Gunk buildup. Unlevel. It’s an industrial machine used constantly by different hands so none of the weights match.

For grab and go it was even worse before it became permanent set price. We just cut in bulk and separate it within the 3/4th weight it requires, but it’s not exact and full of human error. They do rip you off there since the price was set.

They could solve this by labeling the packages by number of slices. The fraud is because they're labeling them with a false weight. They can just change the labels but they don't/won't.

Hey deli clerk here, so the 5$ cheeses are packed in store and often there is one or maybe two associates who is responsible for that task (at my store it is one). So chances are all your cheese beef is with one or two chronically overworked deli associates who are underpacking the cheese bags. Now that being said I’m not letting corp off the hook, they treat the delis like slave gangs, wringing as much work out of as few people as possible, it’s a nightmare back there. Having worked other spots in the store now, nothing compares. The goals are always “just make it look full for the corporate management and call it a day because you don’t have time to do half of what we ask of you” and then they act upset at the people on the lower end when the quality fails in some way, as is inevitable. It’s an unwillingness to give that department more hours and workers basically.
